I think that xanthan gum produces better results in baked goods. It costs a little more, but you use very little in baking so it's not too bad pricewise.

I found that when I was reacting to my own baked goods, it was the guar gum that was zapping me. It has a mild laxative affect that I seem to be very sensitive to. I don't have a problem with xantham gum. I was trying to save money. You do use a small amount though, so, I'll stick xg.

Xanthan gum thickens in the bowl, while guar gum thickens in the oven. So the application you are looking to use it for has a great deal of influence over which one you choose. One would use guar gum more regularly in a cake (a pan to hold it up) than in a cookie, for example (flat on a cookie sheet) Guar gum tends to be less expensive than Xanthan. Many people use them interchangeably, but I prefer xanthan gum.

      Interesting, when I suffered for a few months with ectopics I noticed that carbohydrates would cause indigestion and bloating in my stomach, then that would lead to my heart skipping beats, and I could feel it in my throat, it was very unsettling.  My last serious bout of this was after eating a Muller Rice Pudding for breakfast.   I happened to be wearing a 48 hour halter at the time and cardiology picked it up, but they weren't worried about what they saw. There was some British doctor who'd made some videos on the Vagus nerve that I remember watching at the time which made sense of what I was experiencing, there did seem to be some sort of connection.

      I asked my cardiologist about stopping vitamins.  He said his tests account for all detectable vitamins from sources other than food.  I only need to stop them for a couple of days.  He has me keep records of meds and vitamins I've ingested over the past 10 days and prior and he does his calculations.

      Reply to treats I try and eat to bring up the glucose. Sometime I get up 3 times a night and eat something. I don't think food is the issue. A lot of the food they say should help doesn't.  Many mornings my level is 59 and I feel sick, sometimes for hours. It has been recommended I go to an Endocrinologist.
