Eaten Gluten For Testing For Vegans?

I'm one week in to eating gluten. Have to make it until December 20th (endoscopy is December 21). There's no doubt I'm intolerant (I am not a happy camper right now).

Anyone have any menu suggestions to share with a vegan? I'm eating a lot of bread and cereal right now.

Any other suggestions for how to survive this would be most helpful. THANK YOU. :)

When I was eating vegan ,I was eating a lot of soy. Soy I now know is as big of a problem (maybe bigger) for me as gluten,,just saying.

Sorry, I dont have any helpful suggestions,,hopefully others will have some good suggestions.

I will say; hang in there, and we are here if you need to vent :)

Seitan stir-fried in soy sauce, all the "fake" meats, Boca burgers, and tabouleh come to mind. Also make some split pea soup with pearl barley for me!

As far as coping, maybe some glycine and whatever over-the-counter meds you used to take to feel better. Ugh. I am so not interested in gluten challenge!

Thanks for all the ideas....I never eat the 'fake' meat stuff so might as well enjoy the convenience. Good to know I'm not alone in this....

      Welcome to the forum, @yellowstone! The most common ones seem to be dairy (casein), oats, eggs, soy and corn. "Formed" meat products (because of the "meat glue" used to hold their shape) is a problem for some. But it can be almost anything on an individual basis as your sensitivity to rice proves, since rice is uncommonly a "cross reactor" for celiacs. Some celiacs seem to not do well with any cereal grains.

      What foods can trigger a response in people with gluten sensitivity? I've read that there are foods that, although they don't contain gluten, can cause problems for people with gluten sensitivity because they contain proteins similar to gluten that trigger a response in the body. I've seen that other cereals are included: corn, rice... also chicken, casein. I would like to know what other foods can cause this reaction, and if you have more information on the subject, I would like to know about it. Right now, I react very badly to rice and corn. Thank you.

      Shingles is dormant and related to chicken pox when one has had in the past.Shingles comes out when stress is heightened.I had my 3rd Shingles in 2023.
