Taco Seasoning

I have been gluten free for a week now and am starting to feel better, but planning dinner for my family has become a real challenge. I'm thinking tacos may be a real winner. Any ideas for a homemade taco seasoning? I am a little scared of the premixed seasonings out there.

I use chili powder, garlic powder, onion powder, ground cumin, ground oregano, paprika, cilantro flakes, ground(cayenne)red pepper (just little of this), salt and pepper and a little cornstarch for thickining. I don't measure, just add small amounts and taste. I use the same seasonings for chili.

This is Alton Brown's taco seasoning:

Taco Potion #19:

2 tablespoons chili powder

1 tablespoon ground cumin

2 teaspoons cornstarch

2 teaspoons kosher salt

1 1/2 teaspoons hot smoked paprika

1 teaspoon ground coriander

1/2 teaspoon cayenne pepper

Put all of the ingredients in a small jar and shake to combine. Store in an airtight container for up to 1 month.

Yield: 1/4 cup plus 2 tablespoons

This makes a big difference in taste! Must be smoked paprika.

The following is a very basic blend...

So is this...

I buy dried chiles, dry toast them, grind them and make my own blends.

Making your own is great, so I'm certainly not discouraging that, but I also see no reason to be concerned about the commercial blends in general.

We use the Ortega or the Old El Paso brand of seasoning . . . we've never had a problem with either.

I'm always glad when someone has tried something and mentions it... it just isn't worth being a guinea pig with products. :P

(Yes, I know... Canadian ingredients CAN be different..sometimes with some things) <_<;)

The Lindt (Lindor) dairy-free oat milk truffles are definitely gluten-free, and (last time I checked) so are the white chocolate truffles and the mint chocolate truffles.

I've used magnesium taurinate and magnesium taurate vitamins.  Didn't notice much of a difference when I used them.

More great tips, and a good excuse to shop at M&S and also buy more iced buns!   I wish we had an ASDA near us, as the few times we've been to one their gluten-free pasta range seemed very reasonably priced compared to other shops.  Thanks so much, @Russ H.
