Celiac Disease With Hypoglycemia

This morning, I was attempting to make a gluten-free cake from all gluten free ingredients. The cake mix stated gluten free all over it. It was from Betty Crocker. After, the cake was done, I started cutting it up into pieces. There were a piece or two of cake stuck to the knife blade. So, I decided to eat it and maybe just ver small piece, half teaspoon size. I went on on about the business of finishing the cake. Within 10 minutes, I started having a smothering choking spell, and, it reminded me of am asthma attack. I rinsed my month with water and, took my regular food and hoped it would not go any futher. Thank God, it was a very, very small piece of yellow cake. There was no eggs, or milk in the cake. So, what the heck happened to me? My regular diet plan never causes a reaction that way. Why woulf a simple piece of gluten free cake do that to me?

I do not know what caused your reaction, however I thought I could often my observations: The gluten-free BC cake maxes I have made do have eggs you are supposed to add to them. If you didn't add eggs or used some type of egg-replacer, the recipe would be very dry. The mix is dry even with the eggs added. The only thing I can think of IF this was not an allergic reaction is perhaps the cake mix was old? Some of my stores were closing out the gluten-free BC mixes because they didn't sell. I looked at the expiration date and it was past date.

The reason I clicked on this topic however is that I have hypoglycemia and multiple food allergies too. I find my hypoglycemia is least noticable when I eat a diet low in carbs and low in sugar. I still eat every few hours but I try to eat more protein than I do carbs. If I eat too many carbs, or don't eat about every 3 hours I will end up dizzy, light-headed, nauseus, with blurred vission. Eating lots of protein from meats, nuts, eggs, etc. with lots of cooked vegetables that are easy to digest. Eating very few carbohydrates means I can usually go longer without getting light-headed. Eating some cake (or cake batter) is sure to guarentee my blood sugar is going to spike and then drop off suddenly. So I only have gluten-free cake on my birthday, but plan to not be able to do much after that.

Let me tell you all something about the good old US Government and the Veterans Administation did for me in life or caused ?

First off, for years they VA & US Army gave me all sorts and kinds of Anti-Anxiety Meds. Which, were totally wrong for me according to the civlian doctors I have seen in the past. I had to take these meds for 15 - 20 yrs. In there opinion it gave this condition to me.

Second, the VA & US Army doctors gave me Epilepsy meds of all kinds, never did stop any seizure activities in fact made them worse. Again, the civilian doctor blame the taking of the meds for 15 - 20 yrs in cause seizures to be worse. VA & US Army claimed the did not know my present condition.

Third, I now, have no teeth in my head accept my front teeth only top and bottom 12 teeth in all and, they are now in danger of coming out, too. The oral surgen, whom done work on my gums and teeth were shocked at what they saw in my mouth. My gums and jaw bone decentigrated into nothing and, I have no gum ridges to place false teeth on. So, I get no false teeth ever. I have to grind up all my current food in order to eat anything. This could have all been avoid according to the oral surgen if I had have been told and treated for my present condtions. Celiac Disease & Chronic Hypoglcemia.

My teeth as well as my sons teeth died from the inside out that, means the pulps in all teeth died first leaving the outside of the teeth nice and shinny and white, giving the impression of well kept teeth. Then, the teath all crumbled and broke appart in my mouth one at a time. Again, this could have all been avoided if, I would have been receiving proper treatment of Celiac and Hypoglycemia. Thank so much Uncle Sam.

Fourth, I have to keep a log book ever darn day of my life, to write down blood sugar levels, how often eat, and my activities during the day. I do not get any regular sleep due to have to eat 6 times a day, every 4 hours all during the night and day. Never getting but, 3.5 - 4 hours at a time of sleep. I wake up spend 15 - 20 minutes prparing the meals then, repeating this process every 4 hours, 6 times a day. All of this in order to live.

My yougest son and oldest one now have to do this as I do according to their doctors. This is only the tip of the iceberg, of things I go through daily.

Dizzy spells, blurred vision, lightheaded, foggy mind patterns sometimes, neuropathy in fingers and toes, seizures, tired allot, weak spells, loss of weight, under weight, no muscle tone or muscles on body, have to lay on mattress overlay due to bed sores trying to form, cannot sit in regular chairs due to no meat or muscles on my behind. Found out, 7 yrs ago, the US Government knew all about my condition when, I accidently was given copy of my medical records from the VA Hospital. A disgruntled worker at the VA, send me my official copy before she was fired. Papers dated back to 1985.

None of this is different from what many people here have experienced in the civilian medical system.

You posted with a title of "celiac disease with Hypoglyvemia". Yet when someone does try to discuss thier own Hypoglyvemia & solutions, you start ranting about the goverment. This is not the forum for a rant against the US goverment or any goverment.

I agree. Karl, you seem very bitter against the military and government. The government did NOT cause your health problems (at least not celiac and hypoglycemia). What you went through with military doctors is NO DIFFERENT than what many of us here went through with civilian drs. Many others have told you this in other threads and you ignore them and only want to talk about how bad they screwed you over. It seems to me you only want attention coming here and saying the same things again and again. If you wanted help or to hear from people with similar problems and how they deal then you would have responded differently. I have tried to be helpful, and tried to give you the benefit of the doubt that the illness was affecting your ability to communicate, but I will no longer respond to your posts after reading this one. As the daughter of a veteran I find your constant diatribe against the military very offensive.

I have to agree that this constant subject matter is most offensive. Thank you for your service but the military did not cause all your problems. Perhaps some counseling to get over your anger would be in order. You ignore any suggestions people give you in relation to your health issues, which many of us have dealt with successfully but continue to blame all your problems on the military and VA. You do need help but not the kind we can give you here.

Thanks for posting this. I used the Betty Crocker yellow cake mix and combined it with a can of plain Libby's pumpkin and one egg (which I am fine with), I noticed I quickly developed a headache and scratchy throat. I had the same reaction in the past when I have used Bob's Red Mill gluten free flours with various recipes and also with Betty Crocker's brownie mix. I am baffled as to what it could be that is causing this? I just threw the rest of my pumpkin bread away. I seem to be fine with Udi's breads though. Wondering if anyone else is having these reactions. I am a self diagnosed gluten intolerant person, so not sure if I have Celiac or not, gluten/dairy free for almost 3 years. Any suggestions on alternative flours would be great as I would love to make some cookies for the holidays.

      Tammy, in the food industry, "gluten free" doesn't mean the same thing as "no gluten". As Scott explained, the FDA (Food and Drug Administration) allows food companies to use the "gluten-free" label as long as the product does not contain more than 20 ppm (parts per million) of gluten. This number is based on studies the FDA did years ago to determine the reaction threshold for those with celiac disease. And the 20 ppm figure works for the majority of celiacs. There are those who are more sensitive, however, who still react to that amount. There is another, stricter standard known as "Certified Gluten Free" which was developed by a third party organization known as GFCO which requires not more than 10 ppm of gluten. So, when you see "GFCO" or "Certified Gluten Free" labels on food items you know they are manufactured with a stricter standard concerning gluten content. Having said all that, even though you may read the disclaimer on a food item that says the spices may contain wheat, barley or rye (the gluten grains), you should be able to trust that the amount of gluten the spices may contain is so small it allows the total product to meet the requirements of gluten free or certified gluten free labeling. I hope this helps.

      As soon as I see gluten free I read the labels. I always find stuff that I cannot have on the products them selfs. Like spices, when the labels says  everything listed and then after like say garlic salt then the next thing is spices. When it says that that can contain wheat and other things I can’t have..

      While hypoglycemia isn't a direct, classic symptom of celiac disease, it's something that some individuals with well-managed celiac disease report, and there may be a few plausible explanations for why the two could be connected. The most common theory involves continued damage to the gut lining or nutrient deficiencies (like chromium or magnesium) that can impair the body's ability to regulate blood sugar effectively, even after gluten is removed. Another possibility is delayed stomach emptying (gastroparesis) or issues with the hormones that manage blood sugar release, like glucagon. Since your doctors are puzzled, it may be worth discussing these specific mechanisms with a gastroenterologist or endocrinologist. You are certainly not alone in experiencing this puzzling complication, and it highlights how celiac disease can have long-term metabolic effects beyond the digestive tract.

      Paracetamol, aka, acetaminophen (Tylenol) just does not do anything for me as far as pain relief. It does help with fevers, though.

      I seem to recall that my digestive issues actually started when I was taking NSAIDs c. February 2013 for some unrelated condition.  My stomach got so sore during that time I went to see my GP and she thought it might be an ulcer or gastritis so prescribed me Omeprazole.  That appeared to trigger diarrhea which, once I came off the Omeprazole, did not stop.  I went back to the doctors after a few weeks, and that finally led to my coeliac diagnosis, after months of unexplained neurological symptoms, low ferritin and anxiety,which did not seem to have a cause but of course we later realised was all down to coeliac disease. I occasionally take a very small aspirin for a sick migraine which sometimes only responds to aspirin, but it usually leaves me with sore stomach a few days later. I've been told co-codamol is another medication I could take with a sensitive stomach. I was once prescribed it, to use for just a few days. It is not an NSAID, but it contains codeine, which I understand can be addictive so should be used with care.  It can also cause constipation.
