I've tried my kids on Happy Bites, Ians and Earth best gluten-free chicken nuggets. They won't eat them. My hubby accidentally brought home glutened Applegate nuggets and they ate them all up. Have I missed a good brand?

My kids did not like Ian's at all. Have not heard of or tried the other two.

Applegate farms makes a gluten free chicken nugget that got good reviews at my house (especially from my son who is not gluten free). They were more of a processed (ground) chicken nugget but with a pretty tasty coating.

Bell & Evans gets a good rating as well. The coating isn't quite as tasty, but the meat is not ground which is what my daughter prefers. Bell & Evans also make gluten versions so make sure your package says gluten free.

You could try making them yourself. Here's an easy recipe that is also dairy and soy free if you use soy-free mayo (Betty Crocker Potato Buds are gluten-free):

You took the words right out of my mouth! gluten-free panko crumbs, crushed gluten-free corn flakes (and other cereals) work well, too. Have never tried the BC potato buds - I don't think we have them here??!

I have only found them in select stores. BJ's Warehouse and Walmart--which I don't go in very often but I will go to just buy some of them. I keep a box on hand mainly for my hubby. It's one of the few things he will make himself when I'm not around to cook or if if I get sick and can't cook. As an aside, the recipe I posted may not be the BEST one out there but it is very easy and I know Shayre has said in other posts she doens't cook much. Baby steps sometimes are needed to get into cooking. ;)

My picky kids like Applegate Farms (Sprouts and my local grocery store) and Bell & Evans (Whole Foods). Applegate Farms has directions for cooking them in the microwave, so they're good if you're in a hurry or if you want a kid to be able to make them. My kids hated Hallelujah Farms and Ians.

We have an oven fried chicken recipe on the blog linked from my profile that could work for chicken nuggets if you just make the pieces smaller and boneless.

We just use potato chips. No recipe really. Add whatever you like i.e. parmesan cheese you don't need to add salt though. Make it stick to chicken pieces any way you can and bake in oven. Not healthy at all, but they sure taste good.

You're right - no recipe required! I just dip the chicken into buttermilk then panko (or my own spicy breadcrumbs I make from gluten-free bread heels) that has been seasoned with lots of herbs and spices and Parmesan. Maybe some lemon or lime zest. Usually I make an aoili or honey mustard dip or cool ranch dip (or all three). If I make an adult version I like to make a roasted plum or roasted grape sauce with maybe a touch of Port or red wine and cracked black pepper.

Yes, thank you! Baby steps for me... When I feel like a normal person again, then maybe I will feel like cooking more. Right now...just trying to force myself. Quick or longer recipes and products are always appreciated:) I am not opposed to start ordering from the internet too...to make my family eat without argument!!!

I noticed eating gluten-free or CGF foods have higher sugar and sodium some. No added sugar protein bars I found better with plant fiber. I wanted to know what are you go to besides whole fruits/veggies that you find are healthy for you where you can feel eating normal without hurting yourself or health. I was looking into subscription based like Thrift to see if there is something that is healthier CGF that can make me feel normal. Thanks

Thankyou because I met up with K B with well known bay area hospital once and she said she knows I don't like to take meds, I said thats incorrect, I have issues.Thats the one that said I was deemed " unruly " when she admitted I was celiac when I asked why am I going through this.

Cristiana, that sounds like a great approach and I will be looking forward to the results. I am in the same boat as you. I don't experience overt symptoms with minor, cross contamination level exposures so I sometimes will indulge in those "processed on equipment that also processes wheat . . ." or items that don't specifically claim to be gluten free but do not list gluten containing grains in their ingredient list. But I always wonder if I am still experiencing sub acute inflammatory reactions. I haven't had any celiac antibody blood work done since my diagnosis almost 25 years ago so I don't really have any data to go by.
