Im about to make my first batch of gluten-free cookies. I have everything but Xanthan Gum. I cant seem to find it in stores. Its called for it in the recipe but is it absolutely needed?

Are you using a baking mix or just plain gluten free flours? If you're not using a mix that has it in it then I would say yes you do need to get some for the cookies to come out right. You should be able to find it in with the spices in many grocery stores.

Perhaps someone else might know something you could sub for it?

I agree with the above poster that you'll need xanthan gum. Otherwise, your cookies will fall apart and not be at all chewy. Whenever I make cookies, I use a gluten-free flour mix (usually from Bob Red Mills) and add 2-3 teaspoons of xanthan gum. I've never had to use an "official" gluten-free cookie recipe to make cookies....so it's really easy to make cookies, in general.

As for where to find xanthan gum, I've found it at both regular supermarkets and at healthfood stores.

I haven't done any baking yet but I did read in one Bread book that Guar Gum can be substituted for Xanthan Gum. But, like I said it was in a bread book.

Do you have kroger near by? If so they should have some with the health food section.

I make my cookies without the xanthan gum, stomach does not like it. 3/4 of flour amount I use a multi purpose gluten-free flour, 1/4 of recipe I use almond flour and then I add approx 1/4 c. corn starch, and many times I'll grind gluten-free oats in with it. The corn starch helps the cookie dough to not be as runny. I heard of others using gelatin but I have not tried that.

"Conclusions: The urinary iodine level was significantly lower in women with postmenopausal osteoporosis, and iodine replacement may be important in preventing osteoporosis"  Body iodine status in women with postmenopausal osteoporosis Low iodine can cause thyroid problems, but Iodine deficiency will not show up in thyroid tests.  Iodine is important for healing, its job is to kill off defective and aging cells (Apoptosis). Skin, brain fog, nails, muscle tone all inproved when I started taking 600 mcg (RDA 150 - 1000 mcg) of Liquid Iodine drops. Some with dermatitis herpetiformis, Iodine exacerbates the rash.  I started at 1 drop (50 mcg) and worked up to 12 drops, but I don't have dermatitis herpetiformis.

Thank you so much for sharing your experience and I found myself giggling with happiness as I read how your body reached such spring! And I hope that your current journey is also successful!! Definitely starting the food diary! So many amazing advices. And it’s very scary. It really hits all our soft spots as well as our confidence system. Most doctors I went thought I was underage despite being in my late 20s. Right now I look like am I twelve, but is also this body that’s taking so much, so I might as well love it too! Going to make the necessary changes and stay in this path. Thank you again! 🫶

Thank you so much for the information and kind message! Reading this transformed how I’ve been viewing my efforts and progress. Guess there’s still a lot to celebrate and also heal 😌  Yes, I’ve been taking it! Just recently started taking a multivitamin supplement and separated vitamin D! I also took chewable Iron polymaltose for ferritin deficiency 2 months ago but was unable to absorb any of it.  Thank you again! Hearing such gentle words from the community makes my body and heart more patient and excited for the future.
