Irish Heart, You know I decided to go gluten free on my own after not knowing exactly if I do or do not have celiac (labs said "yes", biopsy was "normal"). Anyway, today is my 4th day of doing no gluten and I have NOT had any nausea or woken up sick in the past 4 days! A smarty pants at work said it was psyco-sematic. I don't think so. I can't remember if I've EVER had 4 days of non-nausea in my whole life! Psycho-sematic or not...I'm going to continue on this plan! I would really love to have the bread recipe you mentioned to me in an earlier post. Thanks so much for all your help & support.

Yes, of course I can give you the bread recipe--and there are many others on here that are good, too (search the RECIPE section!) Many talented bakers on here--recipes to make you drool! :) I have been known to lick my laptop screen. :lol:

This is a simple white sandwich bread recipe adapted from the glutenfreegirl's recipe (google her website for other recipes, too)

Gluten Free Sandwich Bread

Ingredients:

2 cups white rice flour (we use Bob's Red Mill gluten-free)

*****NOTE: For variety and higher protein/fiber,

substitute 1 cup garbanzo bean flour or 1 cup brown rice flour for ONE of the cups of white rice flour.

1/3 cup tapioca flour

2/3 cup potato STARCH (NOT potato flour)

1 TBLS. xanthan gum

1 1/2 teaspoons salt

2 tablespoons sugar

1 1/3 cups lukewarm water

1 tablespoon fast rise yeast (Fleishmann's is gluten-free)

2 tablespoons butter (or 2 tablespoons Earth Balance soy-free spread)

3 egg whites, lightly beaten (OR 2 whole eggs is fine. The whites alone just give it a “white bread “ look :>))

2 teaspoons lemon juice

Directions:

1. In the bowl of a heavy-duty stand mixer, place flours, xanthan gum, and salt. Blend with mixer on low.

2. In a small bowl , dissolve the sugar in the water, then add yeast.

3. Wait until the mixture foams slightly, then blend into the dry ingredients.

4. Add the butter, egg whites, and lemon juice. Beat on high for 3 minutes.

5. Spoon dough into greased 4X4X8 loaf pan. (Pam's is ok)

Use the HEAVY kind of bread pan to prevent burning.

6. Cover the dough with a paper towel and let it rise in a warm place until doubled in bulk, 45-60 minutes. (we heat the oven for one minute and shut it off or place it by the woodstove during the winter)

7. Preheat oven to 400 degrees. Bake for 18 minutes and lower temperature to 365 degrees Bake for 42 more minutes for total of 60 minutes.

8. Remove from pan to cool on a rack, turning it on all sides--to prevent collapsing of the loaf. COOL completely before slicing.

There are ready made mixes, too.

Keep me posted on your progress, but in the meantime, I am very happy for you that you are feeling relief from those awful symptoms!

She agreed that even IF the biopsy was "normal" (which is the result they go by rather than the labs), that I have to do what makes me FEEL better!Feeling better is what really matters, regardless of what tests say!

A positive lab test is positive for celiac and your symptoms

speak VOLUMES. More importantly, how you feel taking gluten OUT is even more indicative of what's really going on.

If you did not have a gluten problem, removing it wouldn't have changed a damn thing.

I know I said this already, but avoid dairy at first and take probiotics for optimal healing. Eat plain, whole foods.

You are a wise woman for taking charge of your health, despite the "advice" of the doctor. ( because doing THAT worked so well for so many of us-- <_< -dripping sarcasm here)

Stay the course and keep feeling better and better. :)

      Welcome to the forum, @yellowstone! The most common ones seem to be dairy (casein), oats, eggs, soy and corn. "Formed" meat products (because of the "meat glue" used to hold their shape) is a problem for some. But it can be almost anything on an individual basis as your sensitivity to rice proves, since rice is uncommonly a "cross reactor" for celiacs. Some celiacs seem to not do well with any cereal grains.

      What foods can trigger a response in people with gluten sensitivity? I've read that there are foods that, although they don't contain gluten, can cause problems for people with gluten sensitivity because they contain proteins similar to gluten that trigger a response in the body. I've seen that other cereals are included: corn, rice... also chicken, casein. I would like to know what other foods can cause this reaction, and if you have more information on the subject, I would like to know about it. Right now, I react very badly to rice and corn. Thank you.

      Shingles is dormant and related to chicken pox when one has had in the past.Shingles comes out when stress is heightened.I had my 3rd Shingles in 2023.
