Other Food Intolerance Or Glutened?

I have been gluten-free for 5 weeks now only because my daughter had issues and I thought it would be easier to keep up with her gluten-free if I was as well. Three weeks into it, I ate bread and was SO SICK within 4 hours of eating it. Sick for two days! So I cooked a meal that I had pre-cooked in my freezer monday night. The recipe does NOT call for gluten, so I thought nothing of it. Well I felt really weird that night but wasn't sure what it was. Then ate it again for lunch yesterday. For dinner ate Pintos, carrots, corn, peas. Felt awful last night. cramps, aching all over. Then I remembered that I *may* have used some wheat flour as a sub in the recipe as a thickener. (UGH!) (cooked this pre- going gluten-free)So today, the stomach pain is so severe, that I am wanting to cry. I have went to the bath room all day and still hurting so bad. I am nauseated as well but I think it is from the pain. I have been eating pintos once a week (at least) for years, So my question is could it be the pintos? the corn? or just Glutened? My 5 year old that is going gluten-free with us (just to see if anyone else has a reaction like mine) also got a bad stomach ache last night and this morning. She has only been gluten-free for 1.5 week though. Any thoughts? My husband thinks it could be the corn. It was corn from our garden that I had put up last year. I think it is the wheat flour....could I have issues this major two days later?

Ugh. Yeah, gluten reactions can go for a while. If it's likely you thickened with wheat flour, I'd bet on the wheat! You double-zapped yourself too. :( It sounds like you need to empty out the freezer.

I take Pepto-bismol when I get glutened and it seems to help me a little.

Thanks for the help. I told my husband that God was helping me by me getting glutened accidentally because after times like that, It makes me not miss the old food like donuts or bread or anything AT ALL!

I think it's possible you have been glutened.

Yesterday I had chili dinner, and I don't know what was put into it-but. Well, I hadn't even finished it. Not even half-way through the bowl! My stomach felt as if it had jumped up and twisted in four knots! UGH!

The problem was, I was eating a dinner roll with it. Made from white flour.

I don't think it would be the pintos. You said you've been eating them for a while, you would have noticed a reaction by now probably.

      @xxnonamexx, There's labeling on those Trubar gluten free high fiber protein bars that say: "Manufactured in a facility that also processes peanuts, milk, soy, fish, WHEAT, sesame, and other tree nuts." You may want to avoid products made in shared facilities.   If you are trying to add more fiber to your diet to ease constipation, considering eating more leafy green vegetables and cruciferous vegetables.  Not only are these high in fiber, they also are good sources of magnesium.  Many newly diagnosed are low in magnesium and B vitamins and suffer with constipation.  Thiamine Vitamin B1 and magnesium work together.  Thiamine in the form Benfotiamine has been shown to improve intestinal health.  Thiamine and magnesium are important to gastrointestinal health and function.

      Welcome to celiac.com @sha1091a! Your experience is a very common one. Celiac disease is one the most underdiagnosed and misdiagnosed medical conditions out there. The reasons are numerous. One key one is that its symptoms mimic so many other diseases. Another is ignorance on the part of the medical community with regard to the range of symptoms that celiac disease can produce. Clinicians often are only looking for classic GI symptoms and are unaware of the many other subsystems in the body that can be damaged before classic GI symptoms manifest, if ever they do. Many celiacs are of the "silent" variety and have few if any GI symptoms while all along, damage is being done to their bodies. In my case, the original symptoms were elevated liver enzymes which I endured for 13 years before I was diagnosed with celiac disease. By the grace of God my liver was not destroyed. It is common for the onset of the disease to happen 10 years before you ever get a diagnosis. Thankfully, that is slowly changing as there has developed more awareness on the part of both the medical community and the public in the past 20 years or so. Blessings!

      @EndlessSummer, You said you had an allergy to trees.  People with Birch Allergy can react to green beans (in the legume family) and other vegetables, as well as some fruits.  Look into Oral Allergy Syndrome which can occur at a higher rate in Celiac Disease.   Switching to a low histamine diet for a while can give your body time to rid itself of the extra histamine the body makes with Celiac disease and histamine consumed in the diet.   Vitamin C and the eight B vitamins are needed to help the body clear histamine.   Have you been checked for nutritional deficiencies?

      I found out the age of 68 that I am a celiac. When I was 16, I had my gallbladder removed when I was 24 I was put on a medication because I was told I had fibromyalgia.   going to Doctor’s over many years, not one of them thought to check me out for celiac disease. I am aware that it only started being tested by bloodwork I believe in the late 90s, but still I’m kind of confused why my gallbladder my joint pain flatulent that I complained of constantly was totally ignored. Is it not something that is taught to our medical system? It wasn’t a Doctor Who asked for the test to be done. I asked for it because of something I had read and my test came back positive. My number was quite high.Are there other people out here that had this kind of problems and they were ignored?

      Welcome to celiac.com, @EndlessSummer! Do you react to all vegetables or just specific kinds or families of them? What you describe with green beans sounds like it has an anaphylaxis component. Like you, walnuts are a problem for me. They will often give me a scratchy throat so I try to avoid them. Does it matter if the vegies are raw or will-cooked in how you react to them?
