My dad calls them " iced" soups because " cold soup" sounds like a punishment. You know, the kid refuses to eat and can't have anything until he eats his soup? By the time he gives in, its cold? I guess that was before microwaves.

Anyway......my mom isn't doing to well. She can eat whatever she wants because she barely eats. She is in the hospital and thought cold iced soups would be nice. I am going to make her the one she used to make a cucumber and potato soup. If she goes home today, these are easy for my dad to fix for her as no cooking needed. But He has gotten proficient at re- heating in the microwave, lately.

I thought others might like some cold soups, too? Thanks

Here's what my dad sent. The butter doesn't make sense. Also, peel the cukes. They make it with the Kitchen Basics no added salt broth.

ICED CUCUMBER SOUP 6/4/2012

1 LARGE POTATO, PARED AND DICED

3 CANS CONDENSED CHICKEN BROTH

2 LARGE CUCUMBERS

2 LARGE LEAKS (1 CUP). We did not use.

1/4 CUP (1 AND 1/2 STICK) BUTTER OR MARGARINE

Cook potato in 2 cans of the chicken broth until very soft in a medium-size saucepan (about 15 minutes).

Pare cucumbers, cut in half lengthwise. Scoop out seeds and slice thinly.

Saute cucumbers and leaks in butter or margarine until soft (about 5 minutes).

Add potatoes and broth and remaining can of broth. Bring to boil, lower temp and simmer 5 minutes, cool.

Pour some of the mix into a blender and whirl until smooth. Continue with remaining mix.

Put in a bowl, cover and chill (possibly 4 hrs).

Garnish with cucumber slices and chopped dill if desired ( we did not do).

Serve cold.

Cold soups for summer. Good idea, K.

Gazpacho

(I'm pretty sure I got this from the Barefoot Contessa's collection)

Serves: 4 - 6 servings

Ingredients

1 hothouse cucumber, halved and seeded, but not peeled

2 red bell peppers, cored and seeded

4 plum tomatoes

1 red onion

3 garlic cloves, minced

23 ounces tomato juice (3 cups)

1/4 cup white wine vinegar

1/4 cup good olive oil

1/2 tablespoon kosher salt

1 teaspoons freshly ground black pepper

Directions

Roughly chop the cucumbers, bell peppers, tomatoes, and red onions into 1-inch cubes. Put each vegetable separately into a food processor fitted with a steel blade and pulse until it is coarsely chopped. Do not overprocess!

After each vegetable is processed, combine them in a large bowl and add the garlic, tomato juice, vinegar, olive oil, salt, and pepper. Mix well and chill before serving. The longer gazpacho sits, the more the flavors develop.

That has a cold pumpkin soup! she was just saying she had a cold pumpkin soup in NZ year ago and liked it.

One of my Dad's favories:

Can of condensed tomato soup heated or two cans of gluten-free non-condensed

Add thinly sliced sweet onion (in ring)

Add cream to taste

Chill

Add thinly sliced cuc's

Dollop with sour cream and chives.

Easy-peesy! :)

I think it would be yummy for breakfast or dessert too.

1 quart strawberries, hulled

1 cup vanilla yogurt

1/4 cup honey

1 cup half and half

Combine berries, yogurt and honey in a food processor.

Blend until smooth.

Pour in the half and half while blending until incorporated.

Serve chilled.

Yum! She can do dairy. She just can't do anything green ( unless it's a mint dessert). :D
