Eileen, I could not tolerate any grains for 2 years including rice. I still cannot eat plain rice, however, can eat Tinkyada pasta- go figure. I don't do any substitutions other than the Tinky and that seems fine- but not every day! Tra la la..... Be well, lisa -

Thank you, Lisa and Ravenwoodglass, Yes, I am having an ongoing issue now for about 3 weeks after feeling so well for so long! Here's an annoying question: does one who is very sensitive need to worry about the seal on my can of Planter's nuts? It sure looks like a glue and I wonder if it has gluten? Lately, when I open their cans I can see the sealant and it's kind of flaky. Any thoughts are appreciated. thank you, lisa -

I avoided all grains for 2 years while healing and now am able to eat pure rice flour. I do no other substituting as I feel better without grains. Corn and soy were particularly problematic and I still have no soy of any kind. I can handle a little fresh corn. Good luck and feel well, lisa -
Yes, check the pet food. I have many animals and recently introduced a new puppy who is spreading his food all over the house and kissing everyone and I've been suffering from some mysterious glutenings. The dog food I use presently is gluten-lite, I think. But I think I might be getting it from somewhere in the dog food... (I, too, have cats all over...

The sweet potato, while good for you, could be too rough for you still. They have lots of fiber. I still cannot eat rice- I get bad bloat and indigestion-however, I CAN eat Tinkyada (rice) pasta. Weird, I know, but I think the Tinky might be processed enough to ease its digestion. In the beginning I had the best luck with plain meat or fish, bananas...

I think you'll find a wide variety of responses to this. I think I used to respond more immediately, however, 4 years in, if I get gluten now, I suspect it's a miniscule amount from cc. I could react right away or take anywhere from hours to days. Makes it sometimes tricky to find the culprit even when I've kept a DETAILED food/symptom log for almost 3 years... -
I hope you feel better soon. It took 2 YEARS for my numbers to get down within "normal". And, yes, you may have other intolerances, especially this early in the game. There is a learning curve and no magic pill... Good luck, keep reading here... lisa

You need to continue to eat gluten until you have a FULL celiac blood panel at the very least. Did this doctor order this for you? It is a combination of 5 tests and will show if your body is reacting to gluten with antibodies. If the doctor has not, DEMAND that it be done. Hi! I eat pretty Paleo as well and whenever I have symptoms again I revert to it religiously. My diet primarily consists of: Fish, meat, chicken, nuts, greek yogurt, cheddar cheese, (not so Paleo) veggies and fruits and I can eat raw sugar in tea; it doesn't seem to bother me. Honey is high in fructose. Many people cannot digest this sugar well. Could be the issue as well. lisa
