  1. I make these breadsticks a lot and everyone loves them. My tweaks to the recipe: I normally throw in a couple of tablespoons each of sorghum flour and flax seed meal, and use roughly 1/2 honey and 1/2 molasses instead of the 3 TBSP of honey in the recipe. I also find I need to bake them longer to get them to actually start to brown - more like 1...
  2. We went last June and stayed at Hawthorn Suites in Orlando. This is not a fancy place, but we were happy with it. The rooms are all 2-room suites, so my husband could stay up late and watch TV when the kids were already in bed. Includes a large breakfast every day, with scrambled eggs, bacon or sausage, fresh fruit, juice, milk, coffee, and some gluteny...
  3. When we got one in our town about a year ago, I e-mailed and got the response below. Then I put them on my "don't bother" list. Sorry. Maybe you could call ahead directly to your restaurant and have better luck. Thank you for contacting us about information regarding the presence of gluten in the foods served at Logan's Roadhouse. We know that people...
  4. Soy flour can have a pretty strong taste - I would only use it blended with outher types of flour.
  5. Here's a staple at our house - frozen taquitos. There are a couple of brands that are gluten-free, just be sure you buy the ones that use corn tortillas instead of flour tortillas (they are well-marked). I buy a big bag, but you can take out as many as you want - just heat and serve. Quick meal with a salad and some salsa.
  6. The above is what I use for 90% of my baking. The Featherlight mix is white rice flour, tapioca flour, and corn starch. With the above ingredients you can make really good bread and pizza crust.
  7. Ditto to the above. Although I just buy the pre-milled stuff. I like it with yogurt, and I just throw in a couple of heaping spoonfuls to almost everything I bake. My son has Celiac, I don't, but last year my doctor said I should take fish oil capsuls for Omega-3. I did for about a month until I noticed my flax seed box - it has more Omega-3 in a...
  8. I have a copy of their old (Jan 2006) gluten free menu, and here is an excerpt: Hearty Steaks - Request that your meal be prepared w/o grill shortening Sirloin Steak Ft. Worth Ribeye T-bone Steak New York Strip Dallas Fillet Sirloin Kabob w/o seasoned rice Filet Medallions w/o seasoned rice Road Kill Prime Rib So this implies that the seasoned...
  9. We use this once a week for taco night - no problems.
  10. I just got an electric waffle cone maker and I'm looking for recipes and any tips. I don't have the cone form so I'll need to improvise. Any suggestions?
  11. We vacationed in Orlando this past summer. Had excellent experiences at NBA City and Margaritaville, both restaurant's at Universal's City Walk. The head chef (Dan) at Margaritaville actually called me in response to my e-mail inquiry. He asked when we were coming and any special items we would like to eat (this was for my son). When we confirmed the...
  12. It's sort of like the saying that a bad day of vacation beats a good day at work. Home-baked bread, even it it doesn't come out just so, is still better - especially fresh out of the oven. And if you are not much into baking (or you are new to it) there are some pretty good mixes to make it easier. Bake away!
  13. I am still experimenting with various types of bread. Most of them tast good, but the hard part is getting the rise right. The time varies, maybe because of the add-ins I use. Thus, I find it far easier to make without a bread machine. The other thing I find is that small loaves are easier to bake through, so I use things like mini-loaf pans and small...
  14. I just put the parchment paper over the pan, a piece big enough to more than cover it. I sprayed the parchment paper with Pam (don't know if that was necessary or not). Then I spread the dough on top of the paper (paper resting on the pan), and put the whole thing in the oven. After the first bake, I slid the crust (very hot!) off the paper and directly...
  15. Making pizza crust is an art - takes some trial and error. Here's what I do. Spray the pan with Pam (when I try to use plain olive oil, it absorbs) I wash my hands, then plop the dough mix in the middle of the pan. Then I get my hands very wet and lightly spread the dough with my hands, working from the middle out. I have to re-wet my hands several...
  16. I use featherlight flour mix for a lot of things I make. How much to use depends on what you are baking. here's a few things I make - cups of flour, then tsp of Xanthan gum cookies: 2 cups, 1/2 tsp brownies: 1 1/3 cup, 1 tsp pizza: 1 cup, 1 tsp bread: 2 cups, 1 1/2 tsp cake: 2 cups, 1 tsp If you are not baking (like making a sauce) I would...

    ARCHIVED Taco Bueno

We have a new one in our town. I tried contacting them via their website three times and never got a response. Finally I had my husband stop by one day and ask if their regular tacos were gluten-free, and the answer was no. That's all I know - I never made any further attempts. Sorry!
  18. I know a family in our town with a Celiac dad and son. They get assistance for the son each year through our local Children's Miracle Network. CMN has an account for him at a health food store for $1000 each year, until he turns 18. I can give more particulars if you want, but the criteria probably vary from place to place, depending on how much funds...
  19. Right hand - even Left hand - below and I don't have Celiac
  20. Last year my kids' school began offering the nasal spray flu vaccine (I think it is called FluMist) and in the instructions it said it was not recommended for persons with any autoimmune disorders. I checked with my son's pediatrician and she advised against the FluMist but said he could have a regular flu shot no problem, so that's what we did.
  21. This is what I use, based on ingredients I normally have on hand: Pamela's substitute 3/4 cup brown rice flour 1/2 cup white rice flour 2 tbsp almond meal 3 tbsp tapioca flour 2 tbsp potato starch 1/2 tsp baking powder 1/2 tsp baking soda 3-4 dashes of salt 1/4 tsp Xanthan gum and here's another good pancake mix I found in a book somewhere...
  22. My sister is a Michigan snowbird with a place in Scottsdale, so our family has been there a few times. Things we have done: Drive to Sedona - about 2 hours north, but it is beautiful!! You can drive through Oak Creek Canyon, visit Slide Rock Park and picnic there (there's a fee to enter). I think this is nearly as scenic as the Grand Canyon. Sedona...
  23. My son is now 13, diagnosed at 10. I'll give you my staples. Not sure about the limitations of diabetes - my son has a sweet tooth. Pamela's Ultimate Baking and Pancake Mix. Has waffle and pancake recipes right on the mix. I add cinnamon and a little sugar (my son eats them without syrup). Also has a great chocolate chip cookie recipe on the package...
  24. We have not tried dairy & soy free, but he gets little if any soy. Garrett has responded to the gluten-free diet in every way except getting taller. He has gained weight (filled out) and his distended belly has shrunk. His energy levels improved tremendously. His pre-diagnosis slight anemia is gone. All of his bloodwork looks great. So after all...
  25. Our son was 10 when we suspected he might have Celiac. His bloodwork was positive, and we did follow-up endoscopy when he was about 10 1/2 to confirm the diagnosis. He started the gluten-free diet in earnest in Jan, 2005, and it took about a year to get the bloodwork from stong positive to weak positive to borderline to negative. He has been negative for...
