Actually, this is incorrect. An intolerance is not an allergy and does not behave like an allergy. Celiac's cannot digest gluten, period. There can be a delayed reaction to ingestion of gluten by a Celiac for up to 2 days before the mayhem sets in. That is more the norm than an immediate reaction. They always do that.....pooh-pooh the idea of thrush. Thrush will give you a coating on your tongue that is white but your throat will be red and sore. You need to find out because if they give you antibiotics, then the thrush will get much worse. Antibiotics kill off the good bacteria in your gut that keeps candida in check. I am so glad you got what you wanted and, it sounds like, a positive experience. That is rare indeed for us. Just remember.....RF (rheumatoid factor) and ANA can be elevated from Sjogren's alone. I think much of the stress that new Celiacs feel comes from these far out ideas on how one can be potentially glutened. They are trying to learn the correct way and instilling exaggerated situations that should not be of concern adds to that stress. I agree with this information completely! I know of very few people who went through a "withdrawal" after starting the gluten-free diet.
