  2. Xanthan gum is safe for Celiacs. If it were derived from wheat, I believe it would have to be listed in parenthesis next to the xanthan gum. I have never seen xanthan gum listed as a questionable ingredient in any Celiac based literature, including Celiac organizations.   4. I have also never heard of any beef being injected with a solution and I have been gluten-free for 7 years. I think that anyone new to this should not be worried about beef in general. Unless you are buying something marinated, fresh beef is not a concern.

  15. You are not obsessed...you are being a good parent. The one thing that amazes me today is how often people let their kids tell them what they will eat.   22. Sunshine...did your ophthamologist test you for Sjogren's Syndrome? I have it and it can cause the symptoms you and Tom are describing. There is a blood test for antibodies but, like Celiac, you can have Sjogren's and test negative for it. Are your eyes dry also?
  23. Some people can control their Hashi's without replacement hormone but those are few and far between. For many of us that went many years without a diagnosis, too much damage has been done and that cannot be reversed. Besides, it isn't medication that you take, just replacement hormone that you don't make enough of. There are natural thyroid supplements also...
  24. There is no need to have a needle biopsy to check for Hashi's as the blood testing for antibodies will tell you that. The biopsy was used to diagnose before the antibody tests were developed. They usually do the needle biopsy if you have nodules.
