  1. I did some research on elimination diets to find out what to eat. A lot of websites had different "safe" foods, so I compiled foods that appeared on multiple sites. I also tried to keep it as simple as possible. Here's what I ate for the first few days: green tea, brown rice, zucchini, pineapple, carrots, and sweet potatoes. I kept a food journal, and...
  2. Cathy, I think Tarnalberry is right about tea, so many good flavors and so many with caffeine! If you're worried about caffeine withdrawal going off coffee, you'll find you can get enough from tea. Green tea is great, if you don't like black teas. Susie's idea about testing cocoa powder is great. There are several cocoa powders available...
  3. Hi Cathy, I just checked Wikipedia, and according to them, neither cocoa beans or coffee beans are actual beans. So no, they aren't legumes, but in my experience, that doesn't mean you can't react to them! By the way, vanilla beans are also NOT legumes, in case you were wondering. I just mentioned it to Susie because I had suspected chocolate...
  4. I get reactions to poultry, brassicaceae family veggies (broccoli, cabbage, mustard so far), soy, and nightshades. I also react to vinegars, including apple cider vinegar, possibly because of the acid. I ate an orange this week that gave me some distress, so I'm going to avoid all citrus for a while. Most of my "intolerances" have a strong enough reaction...
  5. For five years before I was diagnosed, I had serious water retention that raised my blood pressure and required heavy duty diuretics. The water retention and blood pressure was never quite under control, even when I followed a diet of less than 500 milligrams of sodium a day. The only time I felt better was when I ate plain, unseasoned rice. Now that...
  6. I found out I was gluten intolerant through an elimination diet, which also showed me I couldn't tolerate poultry, broccoli, or cabbage. About a month later, I developed an intolerance to soy. About 2 months after that I developed an intolerance to potatoes and peppers. I just had a reaction to gluten free mustard (mustard is in the same family as broccoli...
  7. Your friend cares for you and doesn't want to cause you harm. Yet she doesn't know these meals are causing you harm unless you tell her! Just let her know you are gluten intolerant, you get ill/fatigued, you will just have coffee. She'll understand. Do you go to the same restaurant each time? Maybe you could speak to the manager about preparing eggs...
  8. I've always been cold too and have to be sick to get my temp up to 98.6. My thyroid has been tested umpteen times and always comes back normal. I've tried most of the tricks other people have mentioned. The thing that worked best for me was moving to a warmer climate. Seriously, I used to live in North Dakota and I wore a blanket all the time and...
  9. Hi Tiff, Something that has helped me cope with giving up some of my favorite foods is keeping a supply of gluten free favorites around. Then I just substitute. I don't try to substitute exactly, but instead just eat something else I love. I eat a lot of Fritos, olives, and homemade fudge to replace any bread cravings. Have you tried making a list...
  10. FWIW, you might be developing an intolerance to beef. I found out through elimination that I can't tolerate chicken or turkey. I've tried different cuts, from different stores, cooked different ways, all natural (nothing added but not organic) or organic, and I always get a reaction similar to being glutened. My husband's boss can't tolerate beef. He...
  11. Welcome, Tiff! I agree, cold turkey is the only way! Throw it away, give it away, whatever you have to do to get the gluten out of your house. For some new food ideas, check out the cooking tips section on this message board. There are other vegans on the message board who can give you more ideas. But please, get rid of the gluten now. Every time...

    ARCHIVED New To Celiac

Welcome, newg! You'll find lots of help here. Print out the lists of safe and forbidden foods on the parent site, Open Original Shared Link. Scroll about halfway down the page, under Celiac.com Site Index. It all seems overwhelming at first, but it gets easier.
  13. Sam's Club has a honey-baked, spiral cut ham that is clearly labeled gluten free. I made one for Thanksgiving (I react to poultry, even organic) and it was great. The glaze packet is also labeled gluten free, but I didn't use it.

    ARCHIVED New Here!

Welcome, Regan! I'm glad you found this message board. It has helped me immensely, and I'm sure it will help you. I've been gluten free since August, and I'm still learning, too. There are lots of good, easy recipes in the cooking tips section to help you out with gluten free cooking. It's a lot easier to get excited about food and cooking when it...
  15. I didn't think I could get gluten from a kiss until it happened. My hubby had eaten a cookie at work about 30 minutes before coming home. When he got home, he had forgotten about the cookie and gave me a quick kiss on the lips. You know, the totally unromantic kind! I didn't know about the cookie and didn't taste it. Two hours later the glutening symptoms...
  16. My thoughts exactly! So many great retorts already. I'd try them all, see which one sticks... okay, not the best idea... The SILs sound like they probably act like this about anything outside of what they consider normal. So don't take it personally. They'll move on to something/someone else when they get bored. What about the other family...
  17. I'm going to be at my DH's work-related holiday party in a couple of weeks dealing with a similar thing. My first big social event since being diagnosed. It's a huge, semi-formal, catered event, and I won't be able to bring my own food without looking really strange. (Going to call the caterers but not expecting to be able to eat anything) I'm just planning...
  18. I haven't listened to the segment, but I'm a Miss Manners junkie, and I don't think any etiquette guru means this literally. I can't count the number of times I've smiled while choking down something with walnuts (which I CAN'T STAND) so as not to offend a host... But gluten or other intolerances/allergies are different, in my opinion. I can just hear...
  19. It could be another intolerance, something else in the candy bar. I react to the soy in chocolate, but I don't react if I use cocoa powder in baking. Just a thought. ~Li
  20. I'm so sorry you still feel bad. I've only been gluten free for 3 months, and I still have days that I know everything was gluten free but I feel cruddy. When I have a string of bad days, I go back to eating nothing but brown rice, bananas and zucchini, and water. Those are my "safe" foods. After doing that for a few days, when I start to feel better...
  21. Ugh! How dare they! The crunchy ones I ate two nights ago are still safe, but this is a good reminder to always check the bag. I hope they leave the crunchy formula as-is.
  22. Hi Sara, Personally I would err on the side of caution. For what it's worth, I'm pretty sure my husband glutened me with a kiss last week. He ate a cookie at work about 30 minutes before coming home, forgot about it, and gave me a kiss when he got home. It wasn't even a "romantic" kiss, just a "hi honey I'm home, how was your day" kiss. I felt...
  23. I'm so sorry you are going through this. I'm really no help, I don't have any experience with reactions like yours, the wheezing and hives. Are you able to have teff, quinoa, or millet? Or do they bother you because they are seeds? The only thing I can think of is to rotate the things you can eat. I think I read someplace on the board that...
  24. Hi Jebus, welcome! Everyone here already has great advice. I went gluten free about a month before you did, and was having similar problems. I found it helped to keep food as simple as possible. Just plain meats (no marinades or pre-injected, make sure it's "natural" when you buy it), plain veggies, fruit, rice. Avoiding food that is highly processed...
  25. Another relative newbie here, and I just want to say that all you veterans are awesome! If I hadn't found this message board, I'd still be floundering, instead of making actual headway toward being healthy again. I feel like the collective experience here has knocked 3 years off the gluten free learning curve for me. Honestly, I haven't posted a new...
