  3. I found cooking in a rice cooker is very easy-- I forget not everyone has a rice cooker like here in Hawaii but if I had to get one just for quinoa I would. Always comes out perfect and keeps it warm until your ready to eat.
  4. I love the grain with a ton of fine diced onions, peppers stripped ear of corn and whatever else is lying around. First cook it in the rice cooker )1 to 1.5) using veggie broth I make and garlic. Sweat all the veggies while thats cooking then mix it together. I dont use salt but will use braggs aminos with it or anothert salt free spice.
  5. I often make a salad dressing with it and sweet citrus juice. Sometimes just make a snack with tahini, dates, raisins and other dried fruit. Great stuff!
  6. Thats a really good point about some restaurants still making waitstaff pay for errors. Its not as common as it once was but must still be out there. Could explain her frustration or attitude problems -- still, she can get more tip with honey and not salt!

I guess I Was more concerned with what you said about her attitude and being angry at you. thats plain wrong and I'm sure the owner would love to know about it since thats the last thing they want going around. I have extremes in hawaii with some of the best servers and wait staff in the world -- but there are a few who belong someplace other than...
  8. never heard of anything like this and would think that the owner or managers would like to know about your dissatisfaction. Of course its best your daughter didnt get sick but you could tell them if she had it would be a law suit waiting to happen since the allergens were not mentioned. Then again we can never assume that wait staff or chefs even know...
  9. Don't know about the genes as I was diagnosed by endoscopic exam. I do know that prior to thinking of celiac I was treated for early onset Parkinson's and am glad I dont have to take those drugs anymore! There is no history of any of this in my family.
  10. it would be good for you to get an A1C test which is a better indicator than using the strips. Everyone is different and has a different average. It also changes with weight and over time. good luck
  11. Not hotter-- to hot is no good too but less hot gives me rubber-- also depends on how thick the batter is. If you dont get it spread out quickly it stays thick and gets like rubber too. I think its just finding the balance. I have a commercial restaurant stove with 30,000 BTU burners instead of 15,000 like in most home stoves. That gives me a hotter flame...
  12. I use channa besan too and love it. The key to always good or sometimes rubbery is the temperature of the pan. Finding the combination on your stove will make the difference. I also use blue corn flour -- sorgum and rice flour mix and buckwheat which is really nice for crepes too. Oh - when they are rubbery cut them into 6 or 8 pieces put them...
  13. I would boil the parts and hope for the best -- but have had trouble with things like sharing colanders, pans -- mostly because they dont get cleaned well enough. My wife does not not keep her pans for regular pasta etc. in the kitchen. It amy also depend on how sensitive you are. good luck
  14. Have tried everything and never found a good substitute for orzo or philo for that matter. the Would like to see how its made in greece so we could try to duplicate the orzo shape with other gluten-free flours.

    I teach a class on fruit and product/recipe development at University of Hawaii culinary college and now, after getting celiac, have to wait a day after the bread class before I can teach. Had a lot of trouble from inhaling flour -- more than from accidental ingesting of gluten. I wish you luck.

  20. While most recipes dont have flour in vesuvio, some can use it as a thickener for chicken broth. There might be something in the brother itself if its canned -- Also depends on the restaurant and cross contamination issues. For me, I usually stick to salads especially if its an Italian place. too much chance for contamination and Im very sensitive.

In little India you can order palak paneer ( Spinach and cheese or just the palak ( spinach) Saag -- mixed greens or more common things like aloo gobi which is just the veggies, - It worked for me there. Also many chinese places just served me steamed veggies and rice. I usually came with a few citrus to use as sauce-- Have even used white wine as sauce...
  22. Just a guess but if it says Gluten Free after malt extract, I suspect that the extract may not come from Barley. perhaps they can get it from sorghum or another grain that does not give us problems. Can you call the factory and find out? Kind of hard to do from Hawaii! Thanks
  23. Found this great place while working in miami for a week, La Vie en Raw Open Original Shared Link while mostly raw they do cook some gluten free pasta. The owner Sabina is from Rome and does a great job with creative raw and vegan dishes.
