  1. Hi, Although only with celiac for 5 years, I've had an office in Japan for 30. It takes some getting used to but there should be no problems as long as you have gluten free shoyu with you and you get shio yaki in the izakaya instead of with shoyu. You cant have ramen but you can have juwari soba which is much better! Health food stores also have millet...

  3. Have never had a reaction to annatto but I grown and process my own. When its in other processed products I've never had a problem either. Suspect that those with a reaction have it to the seed itself and its not celiac related.
  4. HAve them check the parathyroids by ultrasound too. That regulates something with calcium which also affects my sweating. good luck
  5. I would try to get additional blood test for micronutrients and hormones. As a celiac the body does not get everything it needs. Also Sweats can be from other allergies you get after celiac. It was 5 years but now I'm off of all dairy too.lots of changes can happen so for me it was a matter of bugging the doc to give me as many tests as he could think...
  6. I used to go through 6 or 7 t-shirts a night they were so wet. Had been off gluten for 3 or 4 years at that point too. The docs could not figure it out but ordered a total blood work up and found I was again without a number of hormones and vitamins. A month on supplements and it was fine. Still happens once or twice every 4 or 5 months if I get glutened...

  10. Some of the nori is processed with soy sauce so you have to make sure the quality is good. Usually cheaper nori, often from Korea, is processed differently than high quality Japanese nori which is just dried and roasted without additives. as long as you stay away from soy sauce you should be ok.

  18. Much depends on the place you go to and the quality of what they use. As mentioned, wasabi can be dangerous. Most wasabi made from powder has wheat starch.   22. Thanks for the youtube link. -- the mixing process is just like the big mochi making machines we have here. Used to bring them in to chicago and then Kona for the hongwanji to use for mochi tsuki. I think its easy to make the bread without gluten and just a matter of coming up with 50gm of something suitable. take care
