  1. I went to my local Dillon's (aka Kroger) to check out their natural foods section today. I was extremely disappointed! There was nothing there that was gluten-free. No bread, no cookies, no crackers, no mixes. No one from management was available for me to ask them about it. I spent 1 1/2 hours walking up and down aisles, just in case it was mixed in...
  2. Gluten triggering asthma? You bet it does!! An accidental ingestion leaves me gasping for air for two days. Doctors don't think of food as causes for these things. If a reaction does not set in within 20 minutes, most doctors will disregard any idea of food as the cause. How very frustrating!!
  3. I was a "nothing." I do not like being sick, and learning that I can feel good like others made it very easy to avoid gluten!
  4. I also recommend the book Herbal Healing by the same author. When the doctor diagnoses something, I always look in those two books. I have found the nutritional and herbal guidelines to be a tremendous help.
  5. If you love to cook and love your kitchen, you are ahead of the game! It is easiest to be gluten-free when you make it yourself. It will get easier, and you do have us for help! We also need you to help us with our questions, so please do not be a stranger!
  6. Just because a label will list a wheat ingredient doesn't mean it will list barley. Make sure you read the labels. I am trying to remember which kind of instant pudding I eat, but the brand slips my mind. I buy it at Wal Mart, it is a mainstream item, but I just can't think of the brand!
  7. I have pain in my right sacroiliac, but it was caused by a car accident in '96. I'm afraid being gluten-free does not have any effect on injuries!
  8. Why do you have to go through the company? My Mary Kay Sales Rep provided me with a book of the ingredients. If your consultant is worth her pay, she will have a book. Because you have ingredient issues, she should give you a book in the interest of keeping your business. Mary Kay is the only make up I use.
  9. I had a sonogram of my liver and gall bladder this past week. It was painless, and showed the tech whether or not I had gall stones. (I had none, thank God!) The funny thing is, that it did show that my intestines were inflamed in that section. The doctor had told me that "all tests" came back negative, and that I "do not have a gluten problem", so I ate...
  10. Is that for the US, or another country? Every bag of Doritos my kids buy lists wheat flour on the label. It is part of the coating.
  11. Have your liver enzymes been checked? Sometimes gallstones are actually caused by a problem in the liver. I think a celiac should have their entire digestive tract examined, once diagnosis is made, simply because everything is so inter-related. If one thing is messed up, chances are another thing got messed up along the way, too.
  12. Hi Judy, welcome to the boards. I was diagnosed in Feb "04, so I am still getting used to the diet. I have also found that cooking from scratch helps me. I don't even mind that it takes time, as I am a 39 year-old stay-at-home mom of two teens. They help out quite a bit, so I have more time than other women to enjoy my kitchen. I have been following...
  13. On my dad's side, I am German. On my mom's side, I am French, Irish, and Dutch. My Grandpa used to tell my Grandma "The French and the Irish, they ain't very much...But anything's better than the ____ ole Dutch!" It never failed to get her riled up!
  14. I am glad you're getting some answers! I just learned this afternoon that my liver problems are why my muscles feel so bad. When the liver heals, the muscles will feel better!
  15. I am having numbness and tingling in my feet and hands, muscle weakness and pain all over my body, no appetite, and forgetfulness. I thought it might be related to the Lipitor that I have been taking, but my doctor thinks it may be because of the new grains I have been eating. I have been eating rice flour, potato flour, xanthan gum, tapioca flour, garbanzo...
  16. Hi, welcome to the board! gluten-free flours do not act or taste like wheat flours, so we have to use other things in them to make them stick together and fluff up. Sadly, your tastebuds will just have to get used to other things. I miss my bread and cakes, but I have found that I can get used to the flavor and texture of gluten-free ones. It does take...
  17. See your doctor as soon as possible. That kind of swelling is sometimes indicative of serious problems. The sooner you know what caused it, the sooner you can do something about it.
  18. I agree with Tiffany. You have developed a conditioned response, and sometimes it takes professional help to break the cycle.
  19. Hmm, I'll have to go to my Kroger store (Dillon's) and check out the meat there. The label on the meat at Wal Mart says right on it that it is "enhanced" with a solution. When I asked the meat department people about it, none of them knew what it is. I do not like "mystery" food! Thanks for the tip-off on the Kroger store, I have a preferred shopper discount...
  20. Hi, Diana, welcome to the board! I have read on another forum that chikpea flour (aka garbanzo bean flour) can be substituted for wheat flour in regular recipes. I tried it in pancakes, and it worked pretty good! Of course, it tasted a little bland, but when I changed the sugar to honey, it tasted good again! With the chickpea flour, xanthun gum and guar...
  21. Dana, One thing I have really learned from this board is that my health is in my hands. I am responsible for taking care of myself as much as I can. I have been researching nutritional health, and have learned that celiac is not the only thing that can be treated just by what I eat. I can lower my chances of diabetes, Alzheimer's, heart disease, cancer...
  22. Hi celiac3270! I think the significance lies in the different ways that celiac is treated in different countries, and what kind of resources are available in the different areas. It also helps with moral support if someone on the board is from your area, because maybe you could get together for shopping trips (spoken like the woman that I am!) and picnics...
  23. Lisa, You are going to love the irony of what I have to do for my liver: 75% of the food I eat each day MUST be raw veggies and fresh fruit, protein MUST be derived from beans, a cup of dandelion root tea each day (but NOT if you have gallstones!), lots of water, and lots of rest. It seems an enlarged or inflamed liver is best treated by (I love this part...
  24. Wal-Mart meats have 8-15% of a "solution" added to "preserve freshness." I shop for meat at my local small store, where they don't add anything.
  25. "I had an ERCP with sphincterotomy in April to clear out my common bile duct, and that did give me some relief. But, my cortisol level is low, and I have very low blood pressure and I get pains in my back near my kidneys so I'm concerned about Addison's. And my bilirubin is going up instead of down, and I wouldn't be too worried about that because I have...
