  1. Xanthan and guar gums make the finished product stickier, so your bread does not crumble and your cookies fall apart. Personally, I am allergic to rice. I use a blend of garbanzo bean flour, potato flour, and soy flour, equal amounts of each. It does not require the gums, the garbanzo bean flour has a natural "stickiness" to it. It makes good pancakes...
  2. FreyaUSa, was your son diagnosed by a doctor? If he was, then the school MUST accomodate his dietary needs. Sending him to the basement alone is dangerous, not to mention humiliating for him. A diabetic certainly would not be treated that way! First go talk to the cafeteria staff yourself, take with you all medical documentation of your sons condition...
  3. We are a weird animal! I would much rather change my diet than take a pill, it puts everything in my control that way. Now your son knows for certain what gluten does to his body, he will be more likely to avoid it in the future!
  4. You might have an allergy to grass. That is what I have, and it means no wheat, barley, rye, rice, or any grain that is a member of the grass family. Since I also have Celiacs, it meant restricting my diet further. If you go to an allergist, have a test done for wheat and grasses. The runny nose and itchy eyes are both indicative of allergy. Celiac will...
  5. Hey, celiac3270. Just take it easy and rest now. Let us know what the results are.

    ARCHIVED The Good Life

It is easier to lose weight, since I can't eat all of the yummies that made me gain weight. It has also made my kids more aware of what they eat, so they eat better.
  7. Sad to say that tests don't always show gallstones. I had two sonagrams, an xray, and a ct scan that said I had no stones, but shortly after, I passed a big one. I had a biliary scan last week, and will be having my gall bladder taken out later this month. Mine had at least one stone (the one I passed, that never showed up on tests), and it does not empty...
  8. I drink Mt. Dew with no reaction. The original, that is. I don't care for the other flavors.
  9. For flour, I use a blend consisting of one part chickpea (aka garbanzo bean), one part potato, and 1/4 part tapioca. It works well for me for pancakes, cookies, and cakes that taste like brownies. I use ground flax in place of eggs, and honey instead of sugar.
  10. Good luck, celiac3270 and Stacie. I will be praying for both of you.
  11. Sorry, Glen! I guess I should have said "my dear, sweet, oh-no-I-would-never-do-anything-like-that, angelic husband"!
  12. Some people are unsympathetic, some are just downright cruel. We have to deal with these people all the time, so it is best to learn to just shrug them off. You will find that many more people try to understand, they just don't know what to say. That was probably the case with the guy who said it sucks and just laughed. It is quite possible he just didn...
  13. Testing can be a :bbbb! I hope that they are able to learn something from your tests. It would really be nice for you to have something definitive to go by. Good luck with it, and don't forget to keep us posted! Thanks for the link, I will check it out when I have more time!
  14. What causes them is what damages your body. They also do damage to your psyche. After so long of being tired, or having a headache, or being irritable, you start to feel bad all over. You get depressed and angry. It is debilitating. Your allergist is probably doing what mine did: discount anything that is not an anaphylactic reaction. He says headaches...
  15. Welcome! We hope to see you around, too!
  16. Whatever. You tested positive for the allergy, so your body does react. You just do not see what the reaction is. I am not going to tell you that you can eat wheat. My mom had the same attitude you are showing, and now she is dead. Her "non-reaction" caused her colon to rupture. Just because you are not seeing a reaction, does not mean it is not happening...
  17. If it says gluten-free on the label, it should be gluten-free. No parts per million. Anything else is false advertising.
  18. Hmm. So far, I am the only one that uses oats. I use Quaker brand with no problems. I am glad oats are not an issue for me, since I already can't have so much other stuff!
  19. My Dh is not celiac, and he can foul the air in a vented bathroom! The plunger stays by the toilet, and I don't leave the bathroom until the toilet is finished flushing. If he truly loves you, he will understand. (Such a trite phrase!lol) Being a guy, there is a good possibility that he will think it is funny, that you can stink up and clog the toilet...
  20. Lupus is a good thought. It is definitely worth looking into.
  21. Tacos with no seasoning?!? Perish the thought! I use McCormicks Mild Taco Seasoning: onion, potato starch, whey solids, salt, spices (including chili pepper, oregano, and cumin), paprika, sugar, garlic, and citric acid. I also use Best Choice Taco Shells: ground corn treated with lime, water, and partially hydrogenated vegetable oils. I am the only one...
  22. The bunless hot dog thing happened to me just recently! I was at a "moving away" bbq for a friend, and was eating hot dogs with no buns. Everyone just assumed I was following the Atkins diet plan. No one thought anything odd about it!
  23. Hi everyone! I'm Dessa. I am 40 years old, happily married, with three kids. My husband works as a civilian contractor in Kuwait, he will be home for R&R Oct 8. My oldest daughter is 21 and lives I don't know where, my son is 16 and works at Sonic (this is significant for me), and my youngest daughter is 15 and learning to drive. I have one dog, a...
  24. First let me point out that only 75% of the people with Rheumatoid arthritis have the antibodies for it. The other 25% don't get definitive treatment until the are around 50, by which time the damage is pretty severe. It could very well be celiac, and your symptoms are manifesting in your joints before they show in your intestines. You could also have...
  25. The diet itself is a test. It is one that some doctors will not accept, because they do not have any numbers for comparison. However, some doctors, mine included, will accept the diet results. It does not hurt to go completely gluten free. You can get a form from Enterolab to submit to your insurance company. Ask your doctor to write you an order for...
