You may qualify for insurance through a high risk pool available through your state. I know California has one and I believe many other state also have them. Also check the availablity of insurance through your former employer using COBRA if you have not already done so. -

Unheated Gluten free pancakes with jam/jelly. I sometimes take this along when I travel. I bring the jelly/jam in a plasitic container along with a plastic knife. Since gluten free pancakes are subject to crumbling I also put them in a container. A "sandwich" size container is about the right size. -

This has been discussed on the board in the past with differing opinions on the saftey of a flu shot. A flu shot is gluten free. I get one every year. I started doing this after a very nasty bout with the flu about 13 years ago. I have never had any adverse reactions to a flu shot. I use plain rice vinegar all the time. The choose a rice vinegar with only rice and water. I usually use Marukan Genuine Brewed Rice Vinegar Light and Mild brand. Sesame Oil is gluten free. You will still need to read the lable to determine if a specific brand is gluten free because of possible additional ingredients. -

A gluten free household is best. You have your families support, go for it. I have a gluten limited household - bread, hot dog buns and cereal are pretty much the only gluten in the household. I have added some additional comments. I worked at a Denny's many years ago. Anything that is cooked on the grill is likely to be CC since most of the food is cooked on the grill including pancakes. -

I am not a expert either, but I agree with lovegrov. If the all parents has the option to send a lunch then I would not think that the school would be obligated to provide a gluten free lunch. Personally, I would feel much safer sending a lunch than relying on someone else to make one in a gluten ladened school cafeteria. My gluten eating son took... -

Any Celiac who can not skip a meal for whatever reason should never allow themselves to be put into situation where it is either not eat or eat gluten. As Jersyangel suggested always have food with you to prevent this. -

I do not have any personal experience but below is the link the National School Lunch Program that provides Discounted and Free lunches based on need. Several documents came up when I put in Special Diet in the search box. I also got results when I put in Celiac. I have never had anyone ask for documentation to support my gluten free diet. I simply state that Wheat, Oats, Rye and Barely will make me very ill. I was diagnosed by a doctor based on my symptoms and an upper GI 30 years ago, so IMO dietary response is proof enough. -
