  1. That sounds like a great conference. I am not sure how many people would be interested but a section on combining gluten free with other food intolerances or other medical conditions such as Diabetes, Chron's, Kidney disease ect..... Also, I see periodic posts by people who have gotten stranded and hungry without gluten free food in sight. Preperation...
  2. I do not cook two meals nor do I use a lot of specialty gluten free products. I went gluten free before there were many specialty gluten free products and most of those were only barely edible. I adapted meals to use rice, corn tortillas or potatoes. My objective was to create a good tasting meal not recreate a gluten meal. Spaghetti Sauce with meat is...
  3. You may qualify for insurance through a high risk pool available through your state. I know California has one and I believe many other state also have them. Also check the availablity of insurance through your former employer using COBRA if you have not already done so.
  4. Namaste - Spice /Carrot Cake is very good. I put Pamala's Vanilla Frosting mix on top of it. The gluten eaters loved it.
  5. Happy Girl covered reading ingredient lables very well. Below are two additonal food buying strategies that I use: 1) "Less is Better" I prefer products with the fewest ingredients. Example one brand says "Pinto Beans and Water" and the other brand "Pinto Beans, Water and Natural Flavors". I pick the first one. 2) If I can not identify all...
  6. Nature Made has several different multivitams you might want to look at. Below is the statement from the website for one of the multivitamins. No Artificial Colors. No Artificial Flavors. No Preservatives. No Chemical Solvents. No Yeast. No Gluten I have seen this statement on other products I have purchased from them. Where I live I can buy them...
  7. Unheated Gluten free pancakes with jam/jelly. I sometimes take this along when I travel. I bring the jelly/jam in a plasitic container along with a plastic knife. Since gluten free pancakes are subject to crumbling I also put them in a container. A "sandwich" size container is about the right size.
  8. Bad gallbladders cause all kinds of grief. Hope you are feeling at 100% very soon. I had my gallbladder out in Aug 07 and, like you feel, much better.
  9. This has been discussed on the board in the past with differing opinions on the saftey of a flu shot. A flu shot is gluten free. I get one every year. I started doing this after a very nasty bout with the flu about 13 years ago. I have never had any adverse reactions to a flu shot. For me, getting the flu is a much worse than any risk associated with...
  10. I use plain rice vinegar all the time. The choose a rice vinegar with only rice and water. I usually use Marukan Genuine Brewed Rice Vinegar Light and Mild brand. Sesame Oil is gluten free. You will still need to read the lable to determine if a specific brand is gluten free because of possible additional ingredients.
  11. A gluten free household is best. You have your families support, go for it. I have a gluten limited household - bread, hot dog buns and cereal are pretty much the only gluten in the household. All gluten is kept outside the kitchen in what I call a "Sandwich Making Center". It consists of small microwave, an apartment and a large kitchen cart with cabinets...
  12. I have added some additional comments. I worked at a Denny's many years ago. Anything that is cooked on the grill is likely to be CC since most of the food is cooked on the grill including pancakes.
  13. I am not a expert either, but I agree with lovegrov. If the all parents has the option to send a lunch then I would not think that the school would be obligated to provide a gluten free lunch. Personally, I would feel much safer sending a lunch than relying on someone else to make one in a gluten ladened school cafeteria. My gluten eating son took...
  14. Any Celiac who can not skip a meal for whatever reason should never allow themselves to be put into situation where it is either not eat or eat gluten. As Jersyangel suggested always have food with you to prevent this.
  15. I do not have any personal experience but below is the link the National School Lunch Program that provides Discounted and Free lunches based on need. Several documents came up when I put in Special Diet in the search box. I also got results when I put in Celiac. I do not know if these guidelines apply if your family does not qualify for Discounted or...
  16. Happy Birthday!!!!
  17. I am not sure my gluten free treat ideas will meet your parents approval but here they are anyway: Ice Cream - Ben and Jerry's in the best IMO with Haagen Daas my next choice Frozen Yogurt - Haagen Daas and Ben and Jerry's are both very good IMO Sorbets - Haagen Daas makes good ones IMO Lara Bars Glutino Breakfast Bars Enjoy Life snack...
  18. I have never had anyone ask for documentation to support my gluten free diet. I simply state that Wheat, Oats, Rye and Barely will make me very ill. I was diagnosed by a doctor based on my symptoms and an upper GI 30 years ago, so IMO dietary response is proof enough.
  19. I was very sick my junior year of college. Lots of D, lost lots of weight, and lots of gas. I was lucky to be diagnosed 9 months after becoming ill. I have be able to stay basically healthy because of the quick diagnosis for 30 years. No other autoimmune diseases, I have been able to work full time and have a child. I had a routine colonoscopy along...
  20. My logout button is also still missing. Maybe the earthquake this morning knocked it off the page.
  21. It is possible she is reacting to the soy flour in the pretzels.
  22. No, he can not have that brand rice milk. I am sure someone will post safe brands of Rice Milk and other dairy free alternatives.
  23. gluten-free NoleGirl "the bag lady" has it correct, always have food with you. Other strategies for food on the go are: 1) Research the fast food restaurants in your area Chick-fil-a and Wendys both have gluten free menus 2) Know where you can get a safe meal or even a partial meal such as a baked potato. 3) Carry gluten free salad dressing and...
