Gluten is not my issue but I do have GERD and an oat intolerance. Chocolate usually gives me severe GERD! The darker the chocolate the worse it is. And I love the dark chocolate. If you are prone to food intolerances, then eating something too often can cause a problem. It won't always but it can. I have gastroparesis too. When mine flares up, I mainly just eat plain white rice with only salt and pepper. Maybe just a touch of olive oil to keep it from sticking to the pan. Oh how I can relate to this! When I was 15 or 16 I wound up getting anorexia because I refused to eat or even drink anything with calories in it. I was super sick to my stomach from both ends. I have so many eye issues, that I'd be terrified to wear contacts. I had to even stop wearing all eye makeup. I had gone to wearing a tiny bit of eyeliner on occasion but I even had to give that up. I hadn't thought of it that way. My mom doesn't have to avoid gluten. But she does have to avoid wheat and nightshades because the flare up her athritis. I would say as long as there is a valid reason to avoid the food, it doesn't matter to me what that reason is, whether the person was diagnosed or not. Garlic really bothers me. I'm not intolerant...

I am a diabetic and I do avoid some things for that reason. I also have gastroparesis and can't eat certain things like broccoli. If broccoli is on my plate, I'll either eat around it or if possible take a salad plate or whatever and pick it off onto that. Or if there is another diner there that wants it, I'll give it to them. I have OAS and a lot of food intolerances but not as much as you. Used to love to bake but for the most part just gave that up. Eat a pretty limited diet now but at least it doesnt make me ill. Don't eat too many sweets. But I am a diabetic so I shouldn't. -
I'm intolerant to almonds, pistachios and macadamias. My symptoms are different than yours. We don't buy much at TJ's any more. Too much produced on shared lines.

I have an extreme dislike for avocados so never eat them or anything with guacamole. Occasionally I will order Mexican food and tell them to leave it off and they forget. I've never heard that before. Daughter has Hashimoto's. Gluten used to be an issue for her but is not now. She does not now and neger had celiac but an intolerance to it. -

I would double check those things for soy. I've made Christina Pirello's chocolate fudge recipe and it's great. If it's any comfort to you, I always look pregnant. And I don't have issues with gluten. In my case, I think, it's caused by gastroparesis. Slowed digestion. If you are buying plain meat at a store, it should be safe. Unless perhaps you are buying it from the butcher counter. If so, check there and see if they have any breaded meats, meatloaf mix, or anything else that might have gluten in it. If there is such stuff, it could have been cross contaminated. For my daughter, eliminating caffeine helped. The caffeine was causing a problem of urinary irritation. Then she wouldn't drink because it burned when she peed. Keep in mind that the A1c is meaningless unless it is high. If high that clearly indicates diabetes. But you could have an average or even low one and still have diabetes. I have.
