ARCHIVED Do I Really Have Pernicious Anemia?
JennyC replied to chatycady's topic in Related Issues & Disorders
I'm in a clinical laboratory science program right now, and they are teaching us that the Schillings test is used to diagnose B12 deficiency and pernicious anemia, so I think it's still pretty standard. I don't think it would hurt to go off your B12, just make sure that they are monitoring you for anemia. -
We should do a test in which we bake one batch of cookies with expandex added and the other batch with regular tapioca flour and see how they turn out! I keep buying the stuff...but I'm not totally sure it's worth the money.

ARCHIVED Breastfeeding
JennyC replied to 2005mom2008's topic in Parents, Friends and Loved Ones of Celiacs
My son also had severe symptoms while he was exclusively breastfed. He would spit up all the time, and had the stinky malabsorption poop. Sorry if too much information, but if you're serious about continuing to breastfeed and keep your daughter gluten free, you should be gluten free as well. -

ARCHIVED Anywhere To Buy G-f Grains In Bulk Quantities?
JennyC replied to MarsupialMama's topic in Gluten-Free Foods, Products, Shopping & Medications
We buy Bob's Red Mill products, some of which in 25 pound quantities. Their products with a gluten free symbol are produced in a gluten free facility, but I don't know much about where they get their grains. Maybe you could try calling them. Open Original Shared Link -
I have some, and I'm not sure it makes a big difference. It's hard to say for sure because I am always trying new recipes. It's worth a try!

ARCHIVED Flat Biscuits
JennyC replied to Twisted Spoon's topic in Gluten-Free Recipes & Cooking Tips
We LOVE this recipe at our house. It is a roll recipe, but they are more like wonderful drop biscuits! Ingredients 4 tbspn of shortening 3/4 tspn of vinegar 3/4 tspn of salt 2 tspn of xanthan gum 1 tbspn of baking powder 1/2 tspn of baking soda 1 c of cornstarch 1/2 c of potato starch 1 c of sour cream 1 packet of yeast (about... -
ARCHIVED Help! Cornmeal!
JennyC replied to penguin's topic in Gluten-Free Foods, Products, Shopping & Medications
We buy Kinnikinnick cornmeal. It is a little pricey, but we don't use very much. -
ARCHIVED Low Ferritin Levels
JennyC replied to cattriona's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Did you get your blood drawn in the morning? It not then your numbers might be off due to the circadian release of iron stores. If your serum iron and iron transport protein (transferrin) are within normal ranges I would not worry about it. You may also be recovering from an anemia or malnutrition and have not built up your stores yet. I hope this helps... -
ARCHIVED Can Anyone Recommend A Multi Vitamin For Kids?
JennyC replied to mimommy's topic in Gluten-Free Foods, Products, Shopping & Medications
Little Critter Gummi Vites are free of many allergens, including wheat (gluten), and it is stated on the bottle! You can even buy them at Costco! -
They may have given me inaccurate information. I have not had a chance to check with the USDA directly. I was also told by Wellshire that they had not produced those chicken nuggets since June 2008 and they are moving facilities. They will still produce their product on shared lines, but they are attempting to meet the proposed FDA definition of gluten...

Regarding the 200 ppm topic... When I contacted Willshire Farms about the gluten in their dino chicken nuggets and corndogs, they told me that when they batch tested the level of gluten in their products never exceeded the USDA limit, which is 200 ppm. When their food was tasted by an outside lab, some of their products tested upwards of 1000 ppm, which...

ARCHIVED Feel Like We Are Back To Square One
JennyC replied to theclutterhouse's topic in Coping with Celiac Disease
You have gotten so much wonderful advice already. I thought that I would add that many children, including my son, have been getting sick from Wellshire products that are labeled gluten free. They make the dino bites chicken nuggets and a brand of corndogs that have been making kids sick. I would also get gluten free dog food, hygiene items, and check... -
ARCHIVED Restrauants That Say Gluten Free But Are Not Or Cross Contaminate
JennyC replied to UnhappyCoeliac's topic in Coping with Celiac Disease
We stick to a few places that I trust. We go to Picazzo's Pizza that has a separate room for preparing gluten free crust and different containers for toppings. We also go to the Corbett/Hawthorne Fish House. Nearly everything on their menu is gluten free except for bread, flour tortillas, and malt vinegar on the tables. We have also gone to Bellagio's... -

ARCHIVED Wellshire Kids' Gluten-free Products Have Gluten!
JennyC replied to Kibbie's topic in Parents, Friends and Loved Ones of Celiacs
His tTG does not get tested until May, but I have noticed improvements since removing the Wellshire Kids chicken nuggets from his diet. He used to have seemingly random episodes of D, now those are gone. He also does not have as many melt downs. What really bothers me is that I still see their products on store shelves. I forget the name, but the common... -
ARCHIVED Strawberry Chex
JennyC replied to *lee-lee*'s topic in Gluten-Free Foods, Products, Shopping & Medications
I bought a box today, and it is delicious! It kind of tastes like they coated the cereal with Nesquik strawberry milk powder. It is very high in calories though. 130 calories for only 3/4 cup of cereal! -
Here are the basics: Upon gluten ingestion, gluten is able to enter into the subepitelial space in the small intestine. This barrier may have been damaged by zonulin or bacterial infections. Glutamine residues in proline-rich areas of the gluten peptide are deaminated by tTG Deaminated peptides have a higher binding affinity to disease-relevant...

ARCHIVED Flourless Chocolate-orange Almond Torte
JennyC posted a topic in Gluten-Free Recipes & Cooking Tips
I was browsing food blogs and I came across this recipe. It sounds so delicious that I might have to make it tonight! I just thought that I would share. Flourless Chocolate-Orange Almond Torte Serves 2 (or 1, if you don't feel like sharing) Ingredients 2/3 cup ground almond meal (you can also use hazelnut or pecans) 3 tablespoons... -
Thank you!

Thank you Rachelle. I was looking at menus online and Pig 'n Pancake looked like the only promising place. Tristen is a really picky eater, but it looks like they might have some options that he can and might eat. I am going to ask them about their ham, scrambled eggs and hash browns. What has your family eaten there? Have a great time snowboarding...

We are planning on going to the beach this weekend and I am curious if anyone knows if there are any places to eat there. I have been unable to find anything in the past. Any input would be very appreciated!
