I agree, it can easily take three weeks or longer to get over being cross contaminated with gluten. It seems neurologically affected people often are a little more sensitive than others. I have to take minerals every day, twice a day. What really made the positive change was taking silica drops, lots of calcium, mag., zinc, trace minerals, vitamin D. I also take nattokinase and some pro-biotics on an empty stomach to help heal the damaged villi. Hopefully you just have another food sensitivity or food allergy. I would try testing out...

Just wanted to add that the dust on the chef's clothes and person is enough to cause cross contamination in your kitchen etc.. I have gotten glutened just walking through a pizza place to use their bathroom in back. I also have gotten it from shaking someone's hand and then opening up a water bottle. Hi Sue, I too have celiac plus a high level of salicylate sensitivity. It can be rough at times. My best suggestion is to exercise if you can, take nattokinase and probiotics plus L-glutamine on an empty stomach to help calm down your villi etc. Then also make smoothies of iceburg lettuce, celery and parsley with a little water added. And drink lots...

It all depends on how long you have had serious gluten intolerance or celiac, and how well you are at healing yourself. Often its best to go on a very simple diet of meat, vegetables and brown rice, avoiding milk products and sugar for the time being. Taking nattokinase and probiotics as well as pancreatic digestive enzymes can help speed up the process...

I have had similar problems. I went off all grains for a year and still had problems with itchy ears and eczema. Turns out I am salicylate sensitive and have had to cut out most fruit and quite a few vegetables as well as a few grains. Thus definitely corn for me is out, as are tomatoes and peppers. If you are concerned, take 400 IU's rather than 800. That is what I do. And do make sure it is gluten-free! Its true your doc might not be aware of the new studies which show one should exercise caution taking a lot of vitamin E. However 400 IU's is completely safe. NIghtshades are potatoes, tomatoes, peppers. I react negatively to salicylates--which are in many foods, especially the skins, as well as in most herbs and most fruit. Salicylates are really the same thing as asperin. One can get leaky gut just from salicylate sensitivity, and it often creates joint and nerve pain etc.. So there are many possibilities... -
Be careful of what is in the supplements. Often gluten is in there, and even if in trace amounts could be a big problem. Don't use any Trader Joe's supplements for instance. I honestly don't really know--except I don't seem to handle any stimulants at all--including chocolate and lately raw garlic (cooked is just fine!). I had to quit first coffee and later black and green caffeinated teas. We already have an overactive immune system. Could that be part of it?? We just don't need it?? I agree with EatMeat4Good,sometimes it does take that long. I have found that it has for me, especially at first, and then later after I got a series of cross contamination glutenings. The worst for me was after being off all trace gluten for a year, I was exposed to a kitchen full of wheat dust from several pies made by my brother for Thanksgiving...

Many here actually find that its better, cheaper and more readily available to cook food from scratch--thus just buy non processed meat, whole grain brown rice, fresh (or frozen vegetables if necessary, but check these too!), raw potatoes, turnips etc. and yams.
