First, I wouldn't take your daughter off gluten if she doesn't have celiac or gluten intolerance. We have one child with and one without and it hasn't been too difficult. It took six weeks for my daughter's symptoms to go away almost completely when we started the gluten free diet. And we were very strict about the diet. Be patient. It can take up to 2 years to fully recover our doctor told us. -

We saw a similar situation with my daughter. She took over 6 weeks for the gluten problems to subside and she never tested positive for any allergies except to cats on the skin prick tests. I'd definitely keep him off gluten and try removing some other foods like dairy if you haven't already. I would ask them if they would push a child with a peanut allergy to eat peanuts. Usually people can understand the severity of that. Chik-Fil-A has an extensive gluten free menu. You can get most of the fast food gluten free menus on line so you can be prepared ahead of time. outback and other restaurants have them also and many of their wait staff are very knowledgable about celiac disease. Good luck! -
