Riceguy, try adding 4 Tbls of Milk powder to the mix, it improves texture, handling and improves crust and crust color. . If making a yeast bread, add 1 tsp of lemon juice or vinegar (yeast likes an acidic environment) also add 1/4 tsp of soda for extra rise. . Best Regards, David -

. I'm gathering from your post that you are only Wheat intolerant and not Celiac, right? . Gluten containing grains include Wheat, RYE, Barley, Spelt, Triticale etc and even Oats (unless guaranteed Gluten Free) and then only if your Villi have completely healed and restrict youself to Max 50g per day!. . If your Central Heating is also Gas and you're Baking during the Winter Months, Gas pressure to your oven will be effected by your heating. . I imagine the laws on selling food baked in your home are very strict iespecially, if you're baking for a specific dietary requirement. . Lots of people have food stalls at Farmers Markets here in Ireland but to sell products that are claiming to be Gluten Free you must have a seperate kitchen vetted and passed by the health and safety board.... -
