You are all right. I have fibromyalgia, migraines and a thyroid condition which all respond well to the gluten free diet, but I think I am gluten intolerant, caught before it became celiac disease. When doctors realize these things, then the gluten free diet will be recommended for more people to see if that helps them. They are making progress. Barbara -

As I am gluten intolerant/not celiac, I have a different reaction to major gluten. I feel sick to my stomach, light-headed, dizzy, sweaty, tired and like I am in a stupor and I just have to go to bed until it passes. Me, too, just went off white sugar, I feel so much better when I don't do that. However, these sound fabulous, I am saving the recipe for my BD or some special occasion and going to put a chocolate ganach on them with a little raspberry sauce made from fresh or frozen raspberries. I have been making my own bread from Bob's Red Mill mixes. I actually make two at a time and put them in smaller pans so that I get eight loaves, cut them in eight each and for thos Weight Watchers out there, it is two points a slice. It only has to be baked for 20 minutes at 375. I just tried Gluten Free pantry's bread and that is good too. I love bread... -

My neurological problems are: lightheadedness, nausea, and just kind of out of it. I have to go to bed and sleep it off, like some kind of stupor. Then I am fine. Keep in mind that certain people just cannot digest oats. I have a gluten intolerance and cannot eat Quaker Oats, they give me terrible neurological problems. I have tried the steel cut/supposedly gluten-free oats and do not care for them. We each have to find what does and does not agree with us and oats is very controversial in the gluten-free world... -

Try to relax, in the scheme of things here, the amount of time will seem small when you look back on it. I think mine took a little under six weeks to come back. Isn't that what they quote? You can eat gluten-free in the meantime, you kow, get a start on feeling better. Barbara -

When they renovated my favorite Walmart in Rhinelander, Wisconsin they installed a small gluten-free section which handles Bob's Red Mill foods and also Pamela's stuff. I am thrilled. I am one of those people who have C instead of D. I use Truvia to help keep me regular, however, I have to be careful as to how much I use it or it can go in the wrong direction!!!! I use three packets on my cereal in the AM and then use Sun Crystals, another stevia for sweetening fruit, etc. Splenda has a lot of bad side effects, just Google it once... -

Just an update to let you know that the metallic taste in my mouth went away after discontinuing Splenda. I wouldn't touch it ever again. It is C for me. When I feel I need it, I put Truvia (an artifical sweetner made from Stevia) on my cereal in the morning and it helps things along. I can't use a lot of Truvia, as then I get another probem. Other sweetners made from Stevia that don't have a chemical in them work fine for me. -

To txplowgirl.......Spenda is really bad stuff. People have had all kinds of bad reactions to it, I wouldn't touch it again. I had this mettalic taste on my tongue and when I stopped using Splenda, it went away. That is just a mild reaction, people have had much worse. Do some research on the internet, you will see. -

Glad to hear there are other people with this problem. It seems to happen to me if I get glutened or if I eat a lot of things with artificial sugar, like candy that is sugar free. It is so uncomfortable that it can happen and we are out among the public. -

Another vote for Kitchen Aid. I bought mine a few years ago and if I had known how great it was, I sure would have found a way to get one much sooner. In my opinion, I think people are LESS likely to get colds and flu if you eat strictly glute-free. I do not get as many colds or flu as when I ate gluten, and I am knocking on wood here that my theory is right. I eat much healthier now than I did before, so less likely to get sick.
