  1. Yes it would be easier. You may not have what a lot of doctors consider to be classic celiac symptoms but I bet your mouth ulcers will go away and you will feel better over all.

  10. Glad the yams and steak are sitting well. Maybe the hot dogs, even though bison were just too greasy for your system. If the yams set well stick with them for a few days with your steak or perhaps a chicken breast. Do try to avoid any processed stuff organic or not. Single ingredients right now are the way to go.

  15. It is your body and your choice whether to test or not. As you know for you to be tested for celiac you do need to go back to eating gluten for a couple of months. If there is no way you can do that then you have your answer IMHO.

  21. Yes you do need seperate mayo, nut butters, butter etc. You don't need to replace dishes but you do need a seperate, new toaster and new strainer for gluten-free pastas.   22. Nope US born and raised. Interestingly my genes are usually genes that are found in the Middle East or Asian population and considered celiac associated genes there...but my parents were German, Dutch (Dad) and Welsh, Irish and English (Mom). There is still an awful lot to be learned about celiac associated genetics.

  25. Since you have been gluten free for a year you would need at least 3 months back on a full gluten diet before testing and you could still have a false negative. If you were diagnosed by a doctor's testing then you are celiac. You may have healed enough so that small amounts of gluten don't seem to bother you but the antibody reaction is still likely going...
