  6. Sweet rice flour is NOT rice flour with sugar added. (I was actually told that at a Wild Oats). It is also called glutinous rice flour but that means sticky and not a bad gluten for Celiacs. I have only found it asian markets. Shop asian markets for some of your flours and starches - they are much cheaper - I paid 69 cents/pound for my rice flours...
  7. Another option would be to use crushed kinnikinnick k-kritter cookies or midel's arrowroot cookies to give more of a shortbread type crust.
  8. I've been told by somebody that has done this . . . Cheeseburger in Paradise will pan fry some fries for you since they don't have a dedicated fryer. Once again, this is not a fast food place, but might be worth asking at some of the other (non fast food) restaurants.

  10. Nope, symptoms don't matter. My daughter's only symptom was acid reflux and they aren't sure that was from the Celiac disease - probably more likely from her Gastroparesis. Don't change his diet until you are ready - If his blood test comes back positive, they will probably want to do an endoscopy and he should still be on gluten at that time. Of course...
  11. Melmak5 is right, the intestinal area that is damaged is the same area that processes lactose. Since lactose intolerance can have similar symptoms to celiac disease, you might not be able to tell if you are doing a good job of going gluten-free. My daughter was virtually asymptomatic.   17. At our first GI appointment, we talked symptoms, scheduled the endoscopy and discussed what they were going to look for. We were expecting the endoscopy based on a conversation with the pediatrician. The doc gave us his top three guesses as to what was going on - Celiac was not one of them.   21. Check the regular Wal-Marts, too!! I didn't find it at the two super Wal-Marts that I went to but the GFP mixes were at the regular Wal-Mart in with the other baking mixes.
