  1. Me too! . . . I'm cheap! I didn't get rid of my good plastic. I will add that I never cooked in it (in the microwave) even tho it says I can.
  2. I don't think you'll go farther in the hole, calorie-wise, by trying the gluten-free diet. There is quite a wide variety of food available. IMO, with the exception of sandwich bread, just about everything has a pretty good substitute available. And as far as the bread goes, some are definitely better than others. We use tinkyada pasta, bell&evans...
  3. Thanks for the suggestions everyone. I was thinking the next time I make choc chip cookies, I'd try to make a few thin ones without choc chips and a few thin ones with choc chips - to use in a s'mores trial. Then of course some regular ones to just be eaten on the spot. I've already got those glutino (ritz-like) crackers. I hadn't really thought about...
  4. I'm kind of in the same boat . . . My daughter has a positive diagnosis. My son is genetically at risk and the blood test is a little muddy (by my interpretation). He will see the GI in about 2 1/2 weeks. I told my husband that regardless of what the doc says, I'm going to try him gluten-free for 3 to 6 months. He has no GI symptoms but he is 8 and...
  5. I think everyone is on the right track . . . Cake's taken care of . . . If you want to help how about an ice cream sundae buffet? (That is if your daughter would like something like that there.) Actually, if she's really generous . . . how 'bout springing for some car insurance for a 16 year old driver???
  6. I'd have to say that making it from scratch is not too bad . . . it's not as big of a time commitment as the yeast bread. It's got more initial ingredients (because of the multiple flour types) but once you get it mixed, you put it in the pan, let rise, & bake. No multiple rises, no additional kneading, no forming of the loaf . . . and your hands stay...
  7. My son visited the nurse a lot when he was in kindergarten (he did not have Celiacs.) Then there was the time when I sent him to school because I thought he was faking it and he wasn't. So after a couple of "is he or isn't he really sick" episodes, I went to talk to the school nurse. She is a wonderful lady. I asked her if she could give me any advice...
  8. Yeah . . . Where's "irish daveyboy" when you need him? Maybe you should ask for a recipe for beer - then he'll show - he's got a recipe for everything!! Just yankin' your chain a bit, David, but if you happen to come across this post . . . What's your alcoholic beverage of choice??
  9. Here's a link to a recent thread that covered much of what you are asking . . . Open Original Shared Link
  10. Another cookie that you could crush is Kinnikinnick's KinniKritters. It's also Dairy/Casein Free (probably not a problem if you are making cheesecake ) and egg free. Like the Midel arrowroot cookies, I'd add some butter and maybe/maybe not on the sugar - depends on how sweet you want it.
  11. My ped GI has my daughter on MiraLax - only one ingredient - polyethylene glycol 3350 - yummy My second opinion doc (also a ped GI) recommended that she take it with apple juice - he had a reason, can't remember why - it was something about keeping fluid in the bowel. It's suppose to be nonhabit forming - can take it everyday (which my daughter...
  12. About 11:30 tonight sounds good . . . that would be the day and time that I picked! Good Luck, Stef, Keep us posted!!
  13. I would do a search in the gluten-free travel section of this forum. I know there are probably more than the one I have a link for: Open Original Shared Link Enjoy your trip
  14. While you wait, you may want to spend some of your time researching and/or changing some of your mainstream items. I know it was being able to buy mainstream stuff that made it seem not so bad. So for instance, if you are using Betty Crocker au gratin potatos - you new mainstream brand is now Great Value (Wal-Mart) au gratin potatos. If you liked to use...
  15. My daughter's blood test was positive and her biopsy was inconclusive. Her blood test also showed low iron and protein. The biopsy showed issues with processing sugars. So reading between the lines, her doc said that she is showing some malabsorption and a little damage (since sugar processing had been reduced). He gave her a positive diagnosis. ...
  16. We have an upcoming, annual camping trip with several other families. Smores are ALWAYS involved. Does anyone have a grahm cracker recomendation? Or a cracker that could be substituted instead?
  17. Oh My!!! I couldn't agree more!!! I'm just happy that I only bought one box - I had two in the cart 'cause they were on sale and then I figured we better just see if we like them first . . . my impression was that it both looked and tasted like cardboard.
  18. katydid, kbabe1968 is using the gluten free yellow cake recipe - then she adds the dry pudding. That's the recipe I use and have great luck with it. I think using rice flour from an asian market (finer ground) helps, too. I also freeze the extra cupcakes (unfrosted) and that has worked out great.
  19. My daughter's symptoms were not particularly definative. The thing that sent us to the GI was acid reflux that got better but did not go away on medication. She was diagnosed with Celiacs in April. In hindsight, she was on the constipated side - but I honestly don't know if that was the Celiacs or a diet high in dairy and not enough fluids. Prior...
  20. Julie, I'm glad everything went smoothly even though it looks like big changes are ahead. I'm sure you and your husband will sleep better tonight now that that endoscopy is behind you. It really hasn't been too difficult of a change for my daughter. I hope it won't be for yours, either.
  21. And you will mess up and make mistakes . . . When you are looking up gluten free items on the internet, double check names/varieties . . . that was one of my mistakes . . . one type of BBQ chip was OK, another with a slightly different name made by the same company was not. One of my other mistakes . . . outdated information. I was using info from...
  22. If you decide you are not going to finish that loaf and try another brand. Then use it for bread crumbs. I'm sure you noticed that the loaf was pricey and small compared to what you were used to - well, gluten-free bread crumbs are pricey, too. I had a recipe that called for stove top stuffing on top. When I converted it to gluten-free, I used my gluten...
  23. I think it's harder on the parents than the kids. Both the procedure and the diagnosis. My daughter is six. Her endoscopy was first thing in the morning. I hope your daughter's is too. It makes it easier for them to go without the food and water. We were actually able to be in the procedure with her. We told her she would see us when she woke up...
  24. I just want to point out how Stef is only proving me right in my baby prediction
  25. My daughter has always loved horses. NEVER had an interest in dolls. It has always been about horses. I had figured (from about the age of 2) that when she got into elementary school, I would look into riding lessons for her. We have friends whose daughter has turned into one of those girls that would live in the barn if they let her. She takes lessons...
