If you need to hear it from a doctor in order to commit to a life long gluten-free diet, then get a second opinion. You won't have to repeat the testing, they will interpret the results from your tests that have already been done. I always put choc chips in my pre-celiac banana bread recipe and they always dropped to the bottom half. I accidently bought the mini-chips recently and used those instead (also - now using a gluten-free recipe) and they seemed to do a lot better job of remaining evenly distributed. So . . . I do plan on just sticking with the mini-chips from now on. -

Most of the recipes that I have seen or tried said to let it rise to the top of the bread pan. Also, one of the problems with the gooey center is too much liquid in the recipe. Cut back on the water or milk. I'm definitely not an expert, but I have started making progress with the dense/gooey problem by cutting back a little on the fluid. It also helps... -

I always freeze unfrosted (not Pamela's but the recipe that I use) and have never had a problem. My grandmother used to freeze cakes with the frosting still on it and the cake part would be fine and the frosting just fell off in chunks. I just got the William Sonoma bug pan for my birthday - the kids are really excited about it. That's a great tip... -

I had a vbac. My daughter WAS going to be induced fairly close to the due date (instead of the two weeks late). The doc didn't want her to go too late - get too big, because of the vbac risks. From your description of the cake, it was obviously made by someone that had not made one before or they would have known immediately that it didn't come out right. And if it was made by someone that's never done it before, you know they don't understand the ramifications of cross-contamination. They could have even used regular flour to dust the cake pan... -
If you don't do it for yourself, do it for your son. He needs a healthy and happy mom. He may also need your support if he finds out later in life that he needs to go gluten-free. You need to be his best example and mentor.

How long have you been gluten-free? You may be having a problem with the dairy. Also, I always make my potatoes in the same dish. Only a rice caserole that I make gets put in the same one.
