ARCHIVED Dairy Free And Egg Free And Soy Free (except For A Couple)
burdee replied to AndreaB's topic in Gluten-Free Recipes & Cooking Tips
Hi Andrea: Thanks for all those great celiac/vegan/soy free recipes!! I've printed and added them to my 'safe' recipes binder. I have some questions about ingredients: (1) For the Almond Mayonnaise recipe, where do you find "Instant Clear Jel"? Can I substitute Knox Gelatine? (2) Have you ever seen Date Sugar sweetened Carob Chips? I would order... -
ARCHIVED Any One Taking Three-lac?
burdee replied to Matilda's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
What kind of dysbiosis (gut bacterial imbalance) do you have? Did you suspect from your symptoms that you had imbalance? Or did you take antibiotics which you suspect killed off 'good guy' bacteria? Did you get tested for bacteria, yeast and/or parasites to determine exactly what you have? My naturopathic doc (who founded the IBS Treatment Center in... -
ARCHIVED Dairy Free And Egg Free And Soy Free (except For A Couple)
burdee replied to AndreaB's topic in Gluten-Free Recipes & Cooking Tips
Where do you find the date sweetened dairy free carob chips? Obviously I can't eat the malt sweetened chips because of the gluten in malt (barley), but I would love to find the date alternative to try making that fudge recipe. It sounds yummy ... except for the raisins! BURDEE -
I found "Smart Squeeze" at my local QUALITY FOOD CENTER (QFC), but they're owned by Kroeger Foods who also owns Fred Meyer. So you might find them at Fred Meyer Stores. Maybe that's a Northwest Chain. You could also look up the "Smart Balance" (who makes "Smart Squeeze") and look for a store locator or 'google' Smart Squeeze. BURDEE

There are safe substitutes for most foods we miss. Our food preferences develop through habits. We can develop other food favorites if we look for appealing substitutes. Lots of people, who say they hate gluten free bread, have not tried all the many gluten free breads available. I dislike most gluten-free breads, but have a few (3-4) absolute favorites...

ARCHIVED Anyone Know If Eggs Can Cause Intestinal Gas?
burdee replied to IrishKelly's topic in Food Intolerance & Leaky Gut
You could have egg (white and/or yolk) allergies. If your celiac symptoms were misdiagnosed for many years, you can develop other IgG or IgA antibody mediated allergies, in addition to gluten intolerance. Consider getting an ELISA blood test panel for IgG allergies to 100 commonly eaten foods. Or eliminate all egg, gluten and dairy products and observe... -
Here's my gluten/dairy/soy free adaptation of a chocolate chip quinoa cookie receipe from Karen Robertson's "Cooking Gluten Free" cookbook: CHOCOLATE CHIP QUINOA COOKIES Cream on high with electric beaters in large bowl: 1 cup palm oil shortening (Spectrum Naturals) 1 cup granulated sugar 1 cup brown sugar Beat until light in texture and add...

My answer to that question would depend on when you asked ... When first was diagnosed with celiac disease, I found many great gluten-free substitute foods and didn't miss anything. After my dairy diagnosis, I tried to substitute soy products for dairy, but really missed cottage cheese. When I realized I also didn't tolerate soy, I really missed ice cream...

ARCHIVED Feeling Bummed About My Ever-narrowing Diet.
burdee replied to frenchiemama's topic in Coping with Celiac Disease
Each time I received test results for more intolerances (gluten from celiac disease) or allergies (milk, then eggs and cane sugar, and finally soy), I initially felt elated to FINALLY know what caused my ongoing painful symptoms. I immediately thought "I can do this. I can find substitutes for foods that bother me or just go without." Then a few days later... -
ARCHIVED Feeling Bummed About My Ever-narrowing Diet.
burdee replied to frenchiemama's topic in Coping with Celiac Disease
Andrea: THANK YOU! THANK YOU! THANK YOU, FOR THOSE 3 MAYONNAISE RECIPES. Have you ever used cashew or almond butter instead of whole nuts and water? I have a great local source of pure, freshly ground almond butter and love cashew butter. I'm anxious to try those recipes. BURDEE -
ARCHIVED Feeling Bummed About My Ever-narrowing Diet.
burdee replied to frenchiemama's topic in Coping with Celiac Disease
Can I vent too? After receiving Enterolab gluten and dairy sensitivity test results 2 years ago, I tried soy substitutes for dairy. I believed I had bad reactions to soy. So I also eliminated soy, but never tested for soy until this year. I did the ELISA test (for allergies to 100 different foods) which showed definite IgG allergies to eggs and cane sugar... -
ARCHIVED Dairy Free Fudge?
burdee replied to daffadilly's topic in Gluten-Free Recipes & Cooking Tips
THANKS SO MUCH FOR THIS RECIPE. After 2 years off gluten, dairy and soy, I was recently diagnosed with additional egg and cane sugar allergies. So I thought I'd never find a 'safe' chocolate or fudge. I CAN eat cocoa and maple syrup, but not cane sugar. I have all those ingredietns (almond butter, real maple syrup and cocoa in my cupboard now. I can't... -
ARCHIVED Beyond Frustration... What Can I Eat Now?
burdee replied to jayhawkmom's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Lemmessee ... That still leaves eggs, all kinds of meats, poultry, fish, lots of gluten free grains, rice, coconut and soy milks and dairy substitutes, oils (plus avocados, olives and other fats), and lots more vegies and fruits to investigate. Look through a farmer's market or Whole Foods. You might find something you haven't tried which you might like... -
ARCHIVED Beyond Frustration... What Can I Eat Now?
burdee replied to jayhawkmom's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Focus on what you CAN have. Can you eat fresh vegies? meats? glutenfree grains? ANY fruits? dairy? nuts or nut butters? I recently tested for more food allergies (ELISA) as well as bacteria, yeast and parasites. My doc originally suspected Candida. So I did the VERY restricted Candida diet for 3 weeks (no sugar, yeast, vinegar, moldy foods, fruit and limited... -
ARCHIVED Do You Have Dry, Painful, Cracked Heels?
burdee replied to azmom3's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I also have the dry, calloused heels and feet, but also elbows. I also had eczema on my arms and inside elbows as a child. Abstaining from gluten and dairy helped the dry skin symptoms. However I still get dry heels during the summer, when I often wear sandles. What helps relieve heel dryness is coating my heels with vaseline before putting on socks during... -
I had lifelong (57 years) 'hayfever', chronic sinus allergies, constant stuffiness, postnasal drip, and frequent colds which often became sinus infections BEFORE I went off dairy. After my Enterolab diagnosis (gluten and dairy intolerance), I abstained from dairy and can BREATHE ALL THE TIME!!! I've had NO winter allergies, no sinus infections, only sore...

ARCHIVED Cherries Possibly Coated With Something Containing Gluten?
burdee replied to eleep's topic in Coping with Celiac Disease
MANY people react to too many cherries with gas, diarrhea and tummy rumblings. However, if you are sensitive to aspirin which contains saliscylic acid, you may also react to any fruit which contains a lot of natural saliscylates, such as plums, peaches, cherries, grapes and apricots, as well as almonds which are high in natural saliscylates. I know this... -
Mike: I had symptoms of both those conditions before going gluten/dairy/soy free. However I STILL have milder symptoms occasionally. So I plan to get the ELISA test panel to determine whether I have other food sensitivities. Enterolab now offers the soy/egg/yeast panel, but I decided to visit a local naturopath who does the ELISA panel, because I don...

ARCHIVED What In The World Now...help
burdee replied to Ashley's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Check the label on Gas-X. I vaguely recall that it has gluten. Ironically many of the OTC meds for bloating have dairy or gluten ingredients, which just exacerbate our symptoms. I drink strong peppermint tea for cramping pain and yoga positions for bloating after gluten or dairy contamination. BURDEE -
Some corrections to locations of Seattle area restaurants which offer Glutenfree entrees or food: Kaili's Kitchen is NOW DaVinci's located at 100th and Greenwood Ave. North; Flying Apron is located on NE 50th and Brooklyn in the U Distorict (however cross-contamination often occurs at this bakery which also features pastries made from spelt, oats and...

ARCHIVED I'm Nervous To Go To A Support Group Meeting
burdee replied to a topic in Coping with Celiac Disease
To all who feel apprehensive about support group meetings: CALL OR EMAIL THE GROUP LEADER. Tell her/him your reservations. Ask questions. If that leader is sensitive, empathetic and understanding, he/she will reassure you and help you feel comfortable about attending. You will also know at least ONE person when you attend. If conversations or email exchange... -
ARCHIVED I'm Nervous To Go To A Support Group Meeting
burdee replied to a topic in Coping with Celiac Disease
What happens at local support group depends on who leads the group and who attends that group. Our local group previously met at a totally gluten free restaurant. However the leader did not have time to plan an 'agenda' or discussion topic or even guest speaker for every meeting. Our restaurant situation allowed lots of 'side conversations' during the... -
ARCHIVED Constipation
burdee replied to jsdawson's topic in Parents, Friends and Loved Ones of Celiacs
I suffered with lifelong chronic constipation. Even after my Enterolab celiac disease diagnosis and then milk intolerance test results influenced me to abstain from gluten and dairy, I STILL suffered from constipation. I 'went' everyday, but never had normal soft stools ... UNTIL I learned that untreated celiac disease depletes magnesium, which controls... -
Dairy Ease helps digest lactose (the milk SUGAR), if you have dairy intolerance, which is caused by damaged villi. Most celiacs have damaged villi and lactose intolerance until they abstain from gluten for awhile to let intestinal villi heal. HOWEVER, if you have CASEIN (the milk protein) intolerance (ANTIBODY REACTIONS TO CASEIN), Dairy Ease and Lactaid...
