  1. I tried this recipe over the weekend with the added pudding powder that Glutenfreefamily recommended. After refrigerating the dough, I tried rolling it out and it crumbled all to pieces! I had to put it back in the mixer with a little milk to get it back to cookie dough consistency. I didn't re-refrigerate it, I just rolled it out at that point. The cookies...
  2. In addition to the gifts of nature, Bob's Red Mill just came out with certified Gluten-Free Oats in September. They have rolled and steel cut. You can order them from their website or ask your local health food store to order them for you.
  3. I've tried the mushroom soup base and it's alright. I don't like it as much as Progresso's Creamy Mushroom soup but it works fine as a substitute and it's not bad. Obviously it's not going to taste like the old Campbell's stuff or work the same way but nothing in the gluten-free diet is going to be the same as the old wheat stuff.

However, I cannot tell you whether flour milled from a Nutrimill compares to Authentic Foods Superfine flour because I've never bought or used that before.   5. Thanks for the recipe! I've made it twice in the last week. The first time I used soured milk as a buttermilk substitute and that seemed to work fine. The second time I used broth instead of milk because we had a lactose intolerant guest. It worked great! I might try the yeast trick next time because the baking soda shines through a bit.

  8. The chances of cross contamination seem pretty high with an unknown bread machine from Goodwill. If it really is unused that would be an awesome bargain but just to be sure I would wash it VERY thoroughly.

I think the fineness I get milling brown or white rice or other grains at home is comparable to flours I've bought like sorghum flour or millet flour.   12. Yes you have to add xanthan gum about a 1/2 - 1 tsp per cup of flour and then it is pretty much usable as a substitute for regular flour. It is pretty strong flour though, because it is mostly beans. I would use it when baking something that has other strong flavors to balance it out.
