	I think a great substitute would be either quinoa or amaranth because they are almost the perfect size and shape. When cooked they look just like couscous and would do rather well in any couscous recipe I should imagine. I've also heard of couscous being made from millet. I take them with food to prevent nausea. They are in a pink bottle, I buy them at Wal-Mart but they may be available elsewhere.
