It is said that much of our serotonin is manufactured in the gut, and if the villi are damaged, maybe that is why anxiety can be such a problem. Maybe if you ate a lot of the foods that are converted into serotonin, like turkey, I wonder if that would help. Or google "increase serotonin" and see if there are any natural supplements that might be helpful. -

I have two ADHD kids and the diet definitely helped one, but did nothing for the other, though she still has to be gluten free because of her stomach pains and rashes. Well, I think what's happening when a person seems addicted to gluten is that bits of undigested or partially digested gluten (or dairy) find their way back into the bloodstream, and supposedly they are of a similar composition to opiates like morphine or heroin and fit into the same receptor sites in the brain. Yes, he had a lot of trouble sleeping. Either he couldn't get to sleep and would keep coming out of his room, or he would go to sleep and then wake frequently during the night. I bought some Melatonin and would give him a half of a pill and that seemed to help. But I would say within a few days of going gluten free he started to fall right asleep and stay... -

Hi, I just wanted to say that my son sounds similar. He had a variety of neurological symptoms and the doctors didn't know what it was. I found out quite by accident that it was gluten. He also had negative Enterolab results. But some people simply don't make much IgA, so they would have a false negative. I also wonder if the IgA non-secretors are the ones... -
Maybe something like Slippery Elm Bark would help. It's supposed to coat and protect the intestinal tract with mucus. I know, mucus sounds gross, but mucus is a good thing. Hi, I'm not the person you addressed this to, but I remember the fingerprint and eyelashes posts. The fingerprint thing is that if you take your fingerprints, a marker for celiac disease or gluten intolerance is that you will see white lines, or white slash mark looking things. I've been using it too, and everything has come out just fine. I've made mashed potatoes, bread, biscuits and doughnuts with it and you would never know they were made with rice milk. Some have said that Rice Dream brand has gluten, though. I have a different brand and it says gluten free on the label. Tomorrow I am going to try the Bob Evans sausage gravy...

Actually, I think the only real way to break down the gluten molecule would be with an enzyme similar to the one normal people have. Acidity won't do it or the acidic conditions in our stomachs would take care of it. Temperature won't do it or it would be destroyed by baking. One day I think people will come up with a way to duplicate the enymatic action... -

This sounds very interesting. I've read other posts about trying vinegar or rubbing alcohol for cleaning gluten-contaminated surfaces. But yet I don't think it could be possible that vinegar or alcohol could disable the gluten molecule because if it could, then people could use malt vinegar and drink beer. Unless there is some variable that would enable it... -

We've never tried Gluten-ease, but we've had a different brand which sounds like the exact same thing, it's DPP-IV and other enzymes. I think it helps. I wouldn't purposely eat gluten, but if you accidentally ingest it or think there may be some CC, I think the enzymes are definitely a helpful thing, at least for us. -
