Hi Kim, You should certainly see your doctor about continued pain like that. It could very well be caused by something else as you said. As far as your doctors not thinking celiac can cause pain though, I'd say they are way off the mark there. At least in my experience they are. -
Hi Valerie, I saw your other thread where you said you just ate spinach for a week. While that worked well for Popeye the Sailorman it probably isn't too great for most other people. Don't tell Popeye I said that though! Your body needs time to adjust to your new diet, so you may experience some GI symptoms as you change your way of eating....

That sounds great Yellow Rose. Maybe as time goes by it will get easier for people with celiac to do events like your retreat. I suppose it is a matter of people getting more familiar with the requirements and what not. Seems like we could have more gluten-free retreats and events at some point.

I would consider adding some quinoa and lentils. Avoid spice mixtures and stick to single ingredient spices. Frozen plain veggies seem to be a little less likely to have gluten added than canned, in my experience. Definitely check all ingredients though. I like them when the ingredients are 2 things, like "peas, water". Be careful of distilled alcohols... -

DPP-IV is a digestive enzyme that they say breaks down gluten and casein proteins. Mine came from Vitacost. I take it when I eat dairy or anything I suspect might have a little cc, like processed in a facility that handles gluten items. I really didn't think it would help but my sister said it helps her. I found it to help when I tried it too. -

Well, that is not a bad thing! At the beginning of the diet there are lots of things to learn, and lots of unknowns. Is this food safe? Is that ingredient safe? Is this food cross contaminated? If you can stay off the gluten the antibodies should diminish over time. So your symptoms may not go away but they wouldn't in theory get worse either. Symptoms are very variable for people. You can read through this board and find all kinds of symptoms that people have experienced. I had various rounds of good times and bad before going gluten-free. Your body is not trying to be sick after all, it is trying to be well and get by these things. DPP-IV seems to help me some. I also add pysllium husks fiber to my food, and black pepper, nutmeg, and turmeric. Black pepper and nutmeg are supposed to reduce absorbtion by the intestine, and turmeric is supposed to reduce the immune reaction. Not saying I have felt a big effect from these though. The DPP-IV does seem to really help. -

I had somewhat similar things happen. Except for the part about migraines. I had my feet and ankles swell up, and couldn't sleep. It didn't happen right away, but over a period of time I had worse reactions when drinking wine. So I quit the stuff for several months and felt better. I don't know about corn starch. It may be ok. I looked at a few links on how they make it and they described soaking the corn in water but not caustic soda. Open Original Shared Link The IATP paper fby David Wallinga says that caustic soda is sued in making citric acid and sodium benzoate also. Those are ingredients in lots of packaged foods too... -

Sure thing Susie. They used to make the rice milk using enzymes from barley. That is the problem. I haven't really researched it lately to find out if they quit doing that, but I haven't heard that they did. -

Thanks Fiddly-Faddly, I might just try that sugar water syrup instead. I do want to make a less sweet version of the brittle. I add some chocolate and coconut and that makes it plenty sweet already. Hi Georgie, Thanks, that is interesting about the iodine Georgie. I will look into it. I am not anxious to take large amount of iodine, but maybe a small amount extra wouldn't hurt. You really do need to check any kind of seeds or nuts you buy for gluten. It is pretty commonly used in the coatings of the seeds/nuts. Especially in mixed varities. Yeast or autolyzed yeast is in the coatings on several brands I've seen. Also be careful of seeds/nuts from overseas where the rules on labeling for allergens might be different.

Sounds great Cat! Take a look around the board here as there are quite a few threads on diet and how to get started doing gluten-free. I like a simple diet of home made food myself, with no processed crapola to cc me generally. It can take a while to learn all the hidden gluten sources so it is easier IMO to just eliminate processed foods. Welcome to...

The CSA newsletter article said that untreated celiacs who show avenin antibodies seem to stop making them after they go gluten-free. Kind of interesting. It could just be a cyst too. My sister had a cyst in her abdomen for years that enlarged her stomach area. Eventually she had it removed, and no problem at all everything was fine.
