  1. Yes, you can test negative for celiac and still have it. That's me And, testing in children is pretty unreliable, and becomes decreasingly reliable the younger they are. Once you have completed testing, if it doesn't indicate celiac, consider giving the gluten-free diet a go for maybe 6 weeks or so. Nothing speaks louder than a dietary response; for...
  2. It's nice to read that doctors are realizing that the diagnostic process needs to be re-evaluated so as to not cause the excessive health problems that are being seen because a patient doesn't meet the requirements... yet. Wonder how long it'll take to be revised?
  3. To further complicate matters, I am very sensitive, but my reaction level is connected to the amount of gluten I ingest. I'll explain: this month has shown me two glutenings. One much worse than the other. While at my gramma's over the holiday, my cousin and I cooked almost everything. We were making a sauce to slow cook some ribs in. She put some vinegar...
  4. You can buy barley in it's whole form and put it in a soup or something. Or probably like a cream of barley type cereal.
  5. I can only agree with ravenwoodglass. If you had to do so much to make yourself able to have a child, why go back to eating what put in that place to begin with? Some people never experience true 'celiac' symptoms, but discover problems as you did, when their thyroid is being attacked, or something else horrible is happening. I am another one who tested...
  6. For chips, I mostly stick with Mission corn tortilla chips or strips. We eat lots of popcorn here, too. I make it in an air popper and can season it however I want.
  7. If you have been gluten lite, which it sounds as though you have, it can most definitely affect your test results. And to be honest, two weeks is probably not going to be enough. Your tests do indicate something's going on, so it seems as though you are on the right track.
  8. The only thing I haven't made and am leary to try, though I will: a croissant. Everything else I make deliciously gluten-free. Oh, and I'd wash it down with either a Sam Adam's summer ale or a Magic Hat #9. I miss beer selections
  9. Personally, I would take him to the doctor. 9 month olds shouldn't be losing weight. Even when they start walking, they slim down, but continue gaining. If you feel something is wrong, trust your instinct. Your weight loss shouldn't matter, starving women in third world countries sustain their children through breastfeeding. Is it ideal? No, but the point...
  10. You can use spices, olive oil, and the like.(I would recommend pure spices rather than blends as sometimes the blends have undesirable things... I've come across only a few that actually contain gluten, though) I consider processed to be anything that has two ingredients that is purchased at a store. (That's me) So, I don't think that brown rice is considered...
  11. The chargrilled club sandwich w/ no bun and usually fries. They don't actually fry things there, which is good for us!
  12. Do you have a Chick-Fil-A near you? I haven't had any issues with them, and I consider myself to be pretty sensitive to gluten. They usually have indoor play lands, too (A favorite of my son's, especially on a rainy day)
  13. I use Carol Fenster's blend as I find that rice flour is generally grainy and I don't care much for it. Her blend you can make yourself: 1 1/2 C sorghum flour (which is about as close to a wheat replacement as it gets) 1 1/2 C potato starch (this is NOT the same as potato flour) 1 C tapioca starch (which IS the same as tapioca flour...) Makes four...
  14. I've been meaning to post this recipe for you since, well, the date you wrote it. But life, as usual, gets in the way. So, since both the kids are sleeping and I have a couple of minutes to sit and type it out, here goes. Enjoy! Open Original Shared Link Whew! That was hard As a note: I generally avoid the jalapeno since I have a 4 yr old...
  15. AFAIK (as far as I know ) there is not a list of abbreviations. Sometimes, I have to google stuff to figure out what it means. I can answer what CC is: cross contamination.
  16. I think that feature has not been activated as yet.

    Wow Janet!! I'm impressed!
  18. Who did you have the test done through? Most of them offer some sort of explanation, although some are better than others. But, you know you can definitely post them here and someone will be able to help.

The edit button is directly underneath the post box, there's a blue strip that has a couple of options, with edit being one of them. I had to make sure it was there, too!
  20. That has happened to me, too. I have now started to use a whisk to mix the flours when I make the blend, which has helped. But, sometimes I have to bake stuff longer than she says in the cookbook. I love her stuff, and I have the 1,000 Recipes, but there's stuff in there that's just wacky. Like in her Fresh Figs with Honey and Goat Cheese, her recipe...
  21. Overwhelming fatigue and pounding headaches were my two longest symptoms. The best we can figure, my pregnancy triggered my celiac, and I went gluten-free when my son was 2 1/2... so, I figure I caught it very early on. However, toward the end of my gluten filled journey, I was starting to have a lot of muscle aches, and somedays I felt beat up from the inside...
  22. I have that cookbook and love it. As with anything, there's stuff that I do differently, but that's what recipes are for, right? To get you started. The mix is great, and I've never used expandex, mostly because I've never been able to find it. I just put extra starch in when she calls for expandex... haven't noticed any difference. It's just modified...
  23. hahaha... still eating kale!!! Last night I made a sweet potato and kale soup with coconut milk served over rice. It's sooo good, and even better right now since it's kind of cold here in the south. And a gumbo last week that was great, but I gave myself a second degree burn making it Does anyone have any advice on cooking a duck? I bought one today...
  24. You're not kidding!!!! My next baking project is to see if I can find a croissant type recipe. I figure I probably can't make the real thing, but I'm going to give it a try!
  25. Yeah, definitely should be fine. I have a couple of pans that are off limits: my small non stick skillet, my baking pans, which includes 2 cookie sheets that I use to make pizza. I'm the only one that bakes, so wheat flour floating around is not a concern, as there is none in the house. But, for the grilled cheeses and occasional frozen pizzas that my husband...
