  2. Welcome!!! I was thinking the same things as the previous poster. Dont' look at this as a "diet" in terms of a weight loss diet. Use the word diet in it's correct form: a compilation of what you normally eat. Your diet just has to change, that's all. See avoiding gluten as avoiding poison, rather than feeling like not having the cookie is depriving...

  9. All of you out there in Raleighwood or surrounding, FINALLY a restuarant around here has gotten with the program. Lilly's pizza at five points has just started serving gluten-free pizza. I think right now they are only making a few crusts a week, but if enough folks around here pull together, maybe we can get them to make more. One small victory...
  10. I totally echo what Laura said. Go find someone else, because it is possible to have Celiac without the two genes. Personally, I would run far and fast from any doctor who told me not to worry about damage done to my body.

  12. If you're ONLY wheat intolerant, then yes, you can eat barley, rye and oats. Have you been diagnosed intolerant or did you stumble across is as many of us did? I would still suggest you do certified gluten-free oats as they may otherwise be contaminted with wheat. It's important for you to know which, as it will dictate how strict you must be with your...

  14. IgG is another antibody that is involved in an immune response, more generalized antibody. IgA is made by the intestinal immune system... in case you were wondering the difference.

(most docs don't test for IgG unless you specifically ask) He ran the gene test on me, discovered I was double DQ2 which put me in the highest risk bracket.   18. Mine were like a little cake too. I had to bake mine for about 15-16 min I think, but that's just a little longer than what the recipe said. Even that, after they cooled they seemed to get just a tad dry, not enough to make them not taste good, but I wondered if I over baked them. Either way, they were yum!!

    Well, today is the day that I started officially blogging. It's kind of strange putting yourself out there like that... My hope is that one day I'll be able to put all of my knowledge to work for those who don't have the resources to find out how to live better.   23. Same with me. Daily headaches, migraines depending on how much gluten I ate. (ex.... pasta, dessert, cereal, bread... all in the same day) Some days I wondered how I could hold my head up. I rarely get headaches any more, except on a glutening or with the seasonal change, like right now. But nothing like that ones before. I hope this helps, and I hope...
  24. I've never made hummus with tahini. Mostly cuz I never have it and forget to get it when I'm out. But, it always is fabulous. I've started recently making it with white kidney beans, cumin, garlic powder, lemon juice, salt and olive oil. Added some fresh cilantro last time and it was soooo good. MMmmm... I LOVE hummus!
