ARCHIVED Gluten Sensitivity Or Celiac
Takala replied to kvanrens1's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Last winter I found out that the reason I was slowly getting symptoms again (at that point 8 years in) was that I was reacting to gluten free flours milled in the same facility with oats. Buh- bye Bob's Red Mill brand for me, hello feeling a lot better. I also had to stop using the almonds I was buying in bulk from one store, because they are run in the... -
ARCHIVED Comically Bad, Slow Bread
Takala replied to Takala's topic in Gluten-Free Recipes & Cooking Tips
Usually, putting a crease and a slice lengthwise down the center of the uncooked dough in the pan, before it goes into the oven, will fix this. And I did that, which is why I was sort of surprised that this didn't let the middle cook through this time. I made nearly the same recipe again this week, minus the corn, into the usual sandwich rolls and little... -
ARCHIVED Had My Endoscopy- So Confused
Takala replied to Momma Bear's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
No, you can learn from even bad experiences. Your antibodies should drop on a gluten free diet, but... it takes time, and there is NO guarantee that they will drop completely in six months, especially if you are a newbie and not used to ferreting out cross contamination. False positives are rare. Damage from reflux is a symptom of celiac. Celiac auto... -
ARCHIVED Do You Ever Cheat On Your Gluten Free Diet?
Takala replied to karinp's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
A few kinds of TEA in the tea bags might have gluten in the flavorings, but the bags are okay.... check the manufacturer's FAQ on flavored teas. Wouldn't go near fake crabmeat . Some cigarette rolling papers and some brands of charcoal and kitty litter having wheat/gluten in them as binders, as well as some types of drywall, were the biggest surprises... -
ARCHIVED Do You Ever Cheat On Your Gluten Free Diet?
Takala replied to karinp's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I don't want to. I think if you got my symptoms, you might not want to, either. I did deliberately risk a cross contaminated meal once, years ago, on a trip, after, in spite of my best efforts, getting hit from the restaurant meal the night before, which was a plain steak and potato I thought, since I'm going to be reacting anyway, and be stuck... -
What a charming room mate you have there. Imagine how wonderful her other relationships will be. I just don't agree with this option: I don't care if other people are "happy for me" or not, but I would be damned if I was going to tip toe around being "less effusive" when I find something I can eat, so as to not provoke a sadistic response...

ARCHIVED Is This Truly Normal?
Takala replied to luvrdeo's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Okay, you can survive nicely on a lower carb diet (raises hand from personal experience) but you will need to take in some form of good dietary fat for slow burning longer term energy, such as olive oil, coconut oil or coconut milk, nuts, eggs, chocolate, etc. This might be as simple as you add in a big spoonful of peanut butter to breakfast, eat more olive... -
ARCHIVED Anybody Speak Lab-Ese?
Takala replied to Dixie81411's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Test to the best of your ability, and then when the dust settles, try the gluten free diet. I had positive brain scan results, had to force the office to give me the results in writing after they stalled around about a follow up appt to explain this, and an (ex) doc who insisted I was still making up my symptoms, which is at least incompetent if not borderline... -
ARCHIVED Dehydration
Takala replied to Jodster72's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
More vegetables, you need the fiber in them to hold the moisture in your gut. Put the stuff in a blender for a smoothie with a piece of fruit, if you can't stand the thought of just eating it. Other than that, I agree w/ the above suggestions that you sound like you're also a bit anemic. At one point I was sucking down blackstrap molasses every day... -
ARCHIVED New And Confused By Doctor
Takala replied to vtphd's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Well..... you do have symptoms. Chronic IBS and D isn't normal. You normally would then, with the symptoms and the one positive, get a biopsy. Or at least a gene test. But it is possible to have celiac or non celiac gluten intolerance, and not test out positive on it for one or both. But the symptoms AND the one near positive... I guess they make more... -
ARCHIVED Assuming Possible Misdiagnosis
Takala replied to Purplemummy's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Hi from back across the pond ! I looked at the NHS website, and that wasn't very helpful, it just said "blood test" for "antibodies." Try here, the Coeliac.org.uk site Open Original Shared Link You're sort of in a pickle, they didn't try to test you very thoroughly, and you're almost off of gluten for a long time, which would... -

ARCHIVED Neurotransmitter Testing Results
Takala replied to ShannonA's topic in Coping with Celiac Disease
1. Eat gluten free. 2. Go to the health food store vitamin section, or even a drugstore or grocery, and read carefully the ingredients on a basic B complex vitamin supplement. You are looking for the words "gluten free." Same for a calcium/D/magnesium supplement. "gluten free." 3. Take the supplements after you have eaten something that agrees with you... -
ARCHIVED Need Some Clever Wording Help
Takala replied to kareng's topic in Coping with Celiac Disease
I dunno. There was a really nice write up about a newer local restaurant here that serves gluten free food. Allegedly, the chef and the owner don't eat gluten. The article was detailed enough to indicate the author had put some care into researching the issue before writing it, and I was pleased to see that. There is an event being held there, that... -

ARCHIVED What Did You Have For Lunch Today?
Takala replied to love2travel's topic in Gluten-Free Recipes & Cooking Tips
(Salvaged) Bread crusts with cream cheese and chocolate nut spread, followed by a salad, so the calories sort of cancel out. I've gone about 3 weeks now having a vegetable smoothie for breakfast, and this was in protest that I am not really a rabbit. I would have had the bread for breakfast, but it wouldn't finish cooking! -
(Preface. For the newer reader, I am not a gluten free baking newbie. I am not even a baking newbie. I made my own bread even before all this, and didn't have any trouble during the transition, and I was using nuts at first. ) I awoke very early this morning, and decided to bake some bread in my brand new, pretty, oval shaped stoneware baking dish...

ARCHIVED Bobs Red Mill gluten-free All Purpose Flour - Any Good ?
Takala replied to Bansaw's topic in Gluten-Free Recipes & Cooking Tips
The taste of properly stored and fresh garbanzo bean flour doesn't bother me because of how I season it, (vinegar or lemon or lime, and a pinch of cumin and cinnamon mostly takes care of that) but the Bob's Red Mill stuff is way too cross contaminated with oats for me to use anymore, and this is a serious bummer for me, because this is the brand the local... -
ARCHIVED Daughter In Crisis
Takala replied to Dixie81411's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Lyme disease can trigger celiac. So can surgery (you said she had surgery in August). Lyme or some of these "unknown" tick diseases can be chronic. If she is getting worse after going off the doxy, that is a hint, UNLESS she has also been upping her gluten consumption at the same time, could be a combination of chronic "unknown" tick disease and the... -
ARCHIVED How Do You Do A Corn Allergy Test?
Takala replied to mommyto2kids's topic in Super Sensitive People
Buy a fresh ear of sweet corn from the supermarket, peel the husk, cook and eat it. If you don't react, then it's a cross contamination problem. If you do react, it may be either a corn problem, a way the corn was processed problem, or a lectin problem. Unless it is a Bob's Red Mill product, then it could be an oats cross contamination problem. -
No, wrong Kate. This one has it. Katharine, Duchess of Kent, wife of Edward, Duke of Kent, the eldest son of Prince George and Princess Marina of Greece and Denmark. Duchess Katharine is 79 years old, and a musician, besides being a cousin of the Queen. She admitted she had been diagnosed with it back in 1999 in an interview with the Daily Mail. ...

ARCHIVED I"ve About Had Enough Of This !
Takala replied to ncdave's topic in Coping with Celiac Disease
Using logic, if you introduce a food into your "safe" list and then get sick, it is that food which you should be avoiding. I've looked online for what the ingredients list is for Hunt's ketchup, and they've been tinkering with their formula a lot, switching from High Fructose Corn Syrup to sugar, back to High Fructose Corn Syrup again. Open Original... -
If you are taking thyroid medication, make sure it is gluten free, by checking with the manufacturer, you may have to contact the pharmacy to get the number to call. Your meds may need to be adjusted in the future, after awhile on the gluten free diet.
