We love talking about this stuff, so don't apologize ! Use a clean new baking pan or cover the old one in foil for now- it's nearly impossible to get an old baking pan clean unless it's sandblasted... For bread baking without yeast, you can leaven gluten-free breads nicely with apple cider vinegar and baking soda. If dairy is a problem, leave it out... -

Almost all adults become somewhat lactose (milk sugar) intolerant after age 40. Earlier is another sign of celiac and gluten intolerance. You may be able to still tolerate gluten-free yogurt or hard aged cheeses, where the lactose is aged out. Diluted yogurt can be used on cereal. Watering down regular milk won't do a thing. You didn't say how old you were. But you're probably not over 30 if you're that cavalier about it. I don't react overtly to gluten the way others do (but now that I'm 6+ years off, this is changing a bit, I can tell ) and I would have had a vastly different life if I had somehow been correctly diagnosed when I started having the other auto immune problems... -

Arrowhead Mills makes peanut butter that is labeled gluten free on the jar. You have to stir it up and keep it in the refrigerator once opened.
