  3. The three gluten-containing grains are wheat, RYE and barley. Most oats are also cross-contaminated unless they are certified gluten-free oats. If he mentioned to avoid soy, that is a separate intolerance that many celiacs have. I know I do. Did they test you for soy? Maybe they actually told you wheat, rye and barley.

  7. You probably need some additional supplements. You need to make sure you are getting calcium, zinc and magnesium to go with your low vitamin D, and the magnesium should also take care of your leg cramps. If your are having continual cramps that would leave residual aching in the calves. Why not give it a try??

  9. For most people, the answers are yes, and yes. It need only be a measly crumb of gluten to set you off, unfortunately. I once get a very mild glutening (not the diarrhea kind) from a poorly washed coffee cup, and I'm not particularly sensitive.

  13. I developed an intolerance to citric acid 18 months after giving up gluten. Used a lot of lemons and juice, was eating lots of mandarins and bammo!! For me, it was itching. But potates and soy make me itch also. So yes, you do have to vary your diet. I am also an undiagnosed gluten intolerant (and soy, corn, nightshades).
  14. A lot of these medical "professionals" are so out of date as to be archaic, and really belong in a fossil museum. One could laugh at them if it were not for the harm that they do.
