  5. @Beverage I think with some people very tiny amounts even once can trigger a severe reaction, and with other people like myself it would take small contamination over time to add up and cause noticeable issues.   11. If you still eat gluten regularly it would make sense to get a follow up celiac disease blood panel. Definitely talk to your doctor in more detail about you biopsy results, but with the little info you gave us here there’s no way to tell for sure.

I had a short-lived gluten-free cookie company, and was shocked about the huge amount of regulations, paperwork, taxes, certificates, etc. to maintain it.
