    Boy oh boy, I hear ya! I have just discovered a miracle though..... My periods were so heavy that I was soaking through a super-plus tampon every 1/2 hour for days!     To all you guys who have seen these "alternative" practitioners, did you have to sign a waiver declaring that you weren't someone who was representing a government agency with the intent of entrapment?     I believe there have been lengthy discussions on here about the distillation process killing any gluten proteins in alcohol. Similar to distilled vinegar - the distillation purifies it.     It's been a long time since I used my bread machine, but I remember I finally found success when I changed the type of yeast, but I can't remember which one was the one that worked! But I definitely know the key to success was the yeast...... I don't mean the brand, I mean the type (slow-rising vs. fast-rising. I am not sure, but maybe it was the yeast...

    Very good discussion.... I truly believe though that most doctors are just simply under-educated about this disease, and that is the reason for the lack of understanding about this disease. I find this incredibly ironic. Someone mentioned that doctors are reluctant to "go there" because the diet is so difficult and the compliance rate is incredibly...

    Now that is interesting...... I wonder if the poor living conditions, contaminated water, etc. contributed to a greater number of gastrointestinal illnesses, which served as the "trigger" to bring on the celiac.... I know my trigger was when I got food poisoning down in Jamaica...... Karen

    This is another area that is soooo confusing about this disease. It would be so easy if, once going gluten-free, a button was pushed somewhere in our bodies where we saw immediate results. Unfortunately, this is not the case. Many times, one must plug away for a year or more with this diet before damage is repaired and results are finally seen. All too...
