  2. I used to make stacked enchiladas with wheat flour tortillas and they always turned out perfect. So I tried it with corn tortillas and the same recipe as the wheat. The corn tortillas almost "disappeared". I thought I just baked it too long. Or needed to use less liquid? It was still good but weird. I have yet to try stacked enchiladas again. Off topic...
  3. Hi, Do you just happen to have the cook book "Cooking Free" by Carol Fenster?? Its a great book for some of those allergies you mentioned. She has a zucchini bread recipe that you should be able to adjust. Use honey or agave for the sugar, her tip is at the bottom of the page. Use egg replacer or flax gel, omit the nuts, add some cocoa...then taste test...

  17. I bought the white, rectangular shaped one from Walmart for $10 called Durabrand. Its not a Belgian waffle iron. The waffle size works great in the toaster. Square waffles like toast. If you have to eat on the run...the waffles are great plain , right out of the toaster!
  18. We have a Winco in the big city with bulk spices. I buy spice shaker bottles there. Clear plastic with a red lid, about 50 cents each.
  19. Shellfish are not healthy to eat. They have contaminants like mercury, chemicals, pesticides, bacteria, viruses parasites, etc... google it. They are designed to clean the waters of the above mentioned list. Same like pigs and rats clean the earth. Pigs eat all that contaminated food and what not. My dh and mil get sick when they eat oysters. Our waters...

  23. I saw it...I hope other companies will notice and compete with Rice Chex for making gluten-free cereals that are affordable. I wish Pebbles would announce it too and help get the competition going!
