Scotch/Irish on both sides.don't know of anyone else that has Celiac in my family, but I strongly suspect that my Mom did from symptoms I remember.

I know the disappointment. The only group I found was a group of mothers trying to figure out lunches and snacks for toddlers. I am rapidly romping through my 60's, so that was not for me. I would love to find a group of adults to have a cocktail with as we discussed grown-up Celiac.

For the spinach salad try (for 2 salads) 2 table
spoons olive oil, 3 tablespoons raspberry vinegar,a little salt and a little pepper. whisk together.

Similar story to one above. Sick off and on for a long time. No idea why. Finally got REALLY sick and wound up in hospital near death. Really cool GI on call diagnosed and had endoscopy done. Totally slick. Never heard of Celiac before.Learned about Gluten free life quickly. Felt MUCH better in a couple of weeks. Been gluten-free for 5 years now. So normal to me. It's just the way I eat. And I eat well. Good food and it really gets easy after while.Don't panic and don't think it's the end of life as you know it. I eat out, have guests in and do all the things I used to do. I'm just careful about what I eat and I live a wonderful life.

Don't give up on the counseling idea. Have you tried Regional mental health clinics? They are based on your ability to pay and not expensive. Also, if you are involved with a church, there may be some help available there. It does sound like you are sabataging yourself for some reason. I have had to develop a very strong will power to lose anything. I am now down about 16 pounds and need to lose about 20 more, so I know how hard it is.

The main key to cornmeal is that the self rising kind will always have wheat flour. Look for pure corn meal... Martha White has a good one.

I live in Mississippi where we have really wierd alcohol laws. So far, the only gluten-free beer we have is Red Bridge. I like it pretty well... you know, it is is your only choice so it's pretty good. The legislature has just decided that we can have beer up to 8% (5% was the old limit) so I'm hoping for some new choices. I'll be looking for some of the ones y'all are reccommending.

I have been in your spot. I could not lose no matter what I did. Dr. found thyroid problem and I started medication. STILL could not lose. I don't mean to sound too symplistic, but what is doing it for me is Weight Watchers. I have lost 16 pounds in 3 months and am steadily loosing. The diet they use is medically sound in that you get all the nutrients you need. There are so many ways you can swap foods around that you don't get bored or develop cravings that you can't satisfy. You can do it online, but I like the support of going to the meetings.
I have a strong aversion to the fad diets that are so popular now and again. Frequently they are so restrictive that they are hard to stay with. Anyway, with celiac I already have to eat a Certain way, and I don't want too many more restrictions. Check it out. Can't hurt!

My desserts have been somewhat curtailed, since I'm on Weight Watchers. However I have found that Jello brand sugar free/fat free puddings made with skim milk are great with fresh fruit. Stir some blueberries into the vanilla, peaches with butterscotch and strawberries with chocolate. So far I've lost 16 pounda and have 20 more to go!

If the desserty thing is a major hurdle, let me suggest The Cake Mix Doctor Bakes Gluten Free by Anne Byrn. This has fabulous recipes that start off with gluten-free cake mixes ( I use Betty Crocker). Everything I have made from this book has been totally up to standard. She covers cakes, cookies, brownies, bundts and bars. The Bacardi rum cake is one of my favorites!

That sound awfully familiar. Have you heard from the thyroid test? I found out mine was very low, and after adding medication I have lost 12 pounds.
The other thing that made a difference was joining Weight Watchers. You can do it on line, but I need the feeling that I have to go weigh in to keep me on the diet.
WW diet is the easiest to follow, because nothing is forbidden. You just have to make swap out type decisions to stay within your allotted points. I strongly recommend it.

Speak to your priest about this. My church (I am Episcopalian) provides a gluten free wafer which is placed over to the side of the plate. I pick it up myself. So far, I have not taken the wine (it still counts as comminion), but your solution sounds good, Do whatever works for you.

Try the Udi's whole grain. It has a more normal taste to me. The suggestion to go off bread altogether is a good one. After a while, I forgot what "egular" bread tasted like. Donuts... not so much!

I know this has been discussed before, but I can't find the thread. I just noticed that Lipton Onion Soup has barley listed in the ingredients. Has it always been there and I missed it or have they changed the recipe? I have used it in the past with no reaction, but I don't know if the package I had before had barley listed.

Are you drinking the polish remover? The gluten has to be ingested, not touched, to harm you.

Louisianna strawberries are here, so I had a big bowl of strawberries with real cream. The berries are so sweet that I don't need sugar.

I use Williams-Sonoma cup-4-cup. It works just like wheat flour and has no off taste.

Hey, USF1970.Pacific makes a condensed cream of mushroom, cr of chicken and cr of aparagus soup that are virtually twins to the canned Campbell's. I use them in casseroles all the time.

I like the Amy's frozen, but I add a small handful of Hormel's crumbled bacon (comes in a bag from Sam's and is marked gluten free).This with a small salad is a good lunch.
On homemade mac and cheese, try sprinkling the top with crumbled potato chips before you bake it.That gives a nice crunch with the smooth mac and cheese.

They also make a roesmary foccacia bread that is incredibly good. My local health food store had it one time, but they have not been able to get it again. Supplier says warehouse is out. They will call me as soon as it comes in.
Do you have any problem getting the other kinds made by Canyon Bakehouse? I wonder if they have been overwhelmed by unexpected success.

I have written about this flour before. I promise I do not work for the company, but I love the stuff! I have made pie crist, cheese straws, biscuits, so many other things that I had given up on. The flour reeally does work "cup-4-cup". To me, it is a bargain at any price!

I think it was a nice mea culpa without admitting how wrong they were. At least they did't advise starting gluten-free diet before testing. They also emphasized that Celiac is a serious disease and not a food fad. Although she did not list all symptoms of Celiac, she did give enough to know that it is not only intestinal. Does anyone know all the symptoms, anyway? All in all, I feel better about their report today than I have in the past.

If your doctor reccommends B12 injections, ask about giving them to yourself. I shoot myself once a month and avoid the office visit fee and time consumption.
