an under active thyroid will cause much joint pain. You may be going though all this because as I started to fix one problem I noticed others. Using buckwheat for the rice works. I think the basic is just egg, backing poweder and flour. I am sure what ever blend of flours you have on had will work in a pinch. -

When you gave up the Gluten what did you add to your diet? I found that I had added a ton of soy and that gave me runs and gas really bad. Perhaps what you added to replace the gluten is reacting bad. -

coconut flour- great for absorbing moisture when you add to much liquid to the mix. Slight coconut taste a little sweet. good for muffin, brownies, sweet things. Adds fiber. Almond flour - my main flour. needs extra binder but has a good almond taste. Muffins, cookies , rich brownies. -

I have found that a mix of flours works best for me. There is a bulk store near me where I can get about 20 types of flour. Coconut flour is one that I have used. It adds a slight coconut taste and absorbs much liquid. so if you use it you need to add more liquid and let your mix sit for at least 15 minutes then see how dry it gets. It is great stuff to... -

Eating things there could be a risk. Some places will not make allergy free meals because they are afraid of the liability. He may not have a separate area to cook. I just bought a small food chopper and toss in some garlic, herbs and oil and brags apple cider vinegar or red wine vinegar. It comes out different every time but I never get board with it. also if you make a dressing then toss in sunflower seeds and or hemp seeds it really makes a great topper or dip. -
