ARCHIVED How To Deal With Questions At Social Situations?
one more mile replied to hilwacat's topic in Coping with Celiac Disease
I answer the questions. I start general then get more detailed if people are interested and seem to be learning. I figure my discomfort may help the person if they develop this illness or if another person they know had the illness. One of the reasons my mom is so accepting of this is because a friend of hers got it when pregnant and explained it to her bingo... -
I did do a cucumber salad today with mint and dill and balsamic vinegar. and red peppers and celery. Any other Ideas on what to do with it? Cooked or raw, either works.

ARCHIVED Easy, Yummy Bread In Minutes
one more mile replied to lonewolf's topic in Gluten-Free Recipes & Cooking Tips
I have put cheese in one and it worked pretty good. Hemp seeds also are a good nutrition addition. You can really add anything just think of it as a portable omelet with flour in it. -
ARCHIVED Rewards
one more mile posted a topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
This may sound silly to some but it is a big deal to me. I was sick enough for two years that I had to use my credit cards to make ends meet. But now with the new energy of being Gluten free and the money I am saving from not binging I have been able to pay off the smallest of my credit cards, all this with a kid in college. I am so proud of me! I never thought... -
ARCHIVED Sensitivity To "healthy" Foods
one more mile replied to jasonD2's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I think we have to give up on the idea of what is "healthy" and what is not. Some people think iceberg lettuce is a healthy food and some think it is bad for you. It makes me run to the bathroom and that is enough to make it to my not healthy list. My grandma gets ill on rosemary, I love the stuff. Soy is mana for some, not for me. My grandman shudders at... -
ARCHIVED What All Were You Tested For Before Celiac Diagnosis?
one more mile replied to latteda's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I was tested for enough stuff that my diagnosis was hypochondriac. They actually had that written in my file. I told my new doctor that I use to be a hypochondriac but now was a celiac. She laughed, apologized and said I was right. -
ARCHIVED Where Does Gluten Hide
one more mile replied to hermit41's topic in Dermatitis Herpetiformis
in my house it hides on the counter tops. My food never touches the counter now. There is no 5 second rule for us! I agree with what the first poster said. Get back to basics and slowly add food. I add things one at a time. If trying something new I take one bite and wait about 15 minutes. I would much rather have to heat up a new food then spend a few... -

ARCHIVED I'm Planning My Cheat Day
one more mile replied to Blessings's topic in Coping with Celiac Disease
Not tempted at all. Spending two years in bed and not knowing why is where I came from. Right now I am having fun figuring out how to make and buy safe alternatives. It can be done, QVC and Open Original Shared Link make an awesome breaded chicken. Ben and Jerry's has an allergy food listing guide that has a whole page of gluten free ice creams. That is... -
ARCHIVED Eating Disorder Brought On By Gluten Intolerance?
one more mile replied to kdonov2's topic in Coping with Celiac Disease
progress not perfection For me the answer is yes the gluten intolerance did add to my eating problems. I am a compulsive over eater who at times slipped into not eating much for a few weeks. I never really figured it out but when it gets hot the thought of food makes me ill. I thought of it as losing weight, my kid thought I was being anorexic. ( granted... -
ARCHIVED Easy, Yummy Bread In Minutes
one more mile replied to lonewolf's topic in Gluten-Free Recipes & Cooking Tips
I also made a breakfast version of this and took it along on my trip. I added lemon peel, ginger and nutmeg and raisins nuked it and tossed it in a baggy. It traveled well and with a bit of orange juice was a great way to start the day. I also added dry onion, sage and rosemary and made a single persons dinner roll. It is just such a cool idea to play... -

ARCHIVED Cheap Option For gluten-free Battered Meats.
one more mile replied to MisoSushi's topic in Gluten-Free Foods, Products, Shopping & Medications
I have been ordering from them for two months. I get the allergy box and my roommate gets the regular order and the extra meat box. We are both delighted with what we received. I have to watch how much rice I eat and the batter is rice based but even with eating the allergy free meats about 4 times a week I had almost a months worth of meat for one. ... -
ARCHIVED Getting Tested
one more mile replied to gfpagan's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
There should be a better way to be tested. I have not been tested and can not imagine Eating what I know is poison just to find out officially that it is. In the uk will they accept the DNA test? -
It is not a fluke. I sleep much better, much deeper and much less since changing my diet. I have been on Magnesium for years for another problem and that did not really help. My restless leg syndrome has hit me only twice in the last few months, once when glutened and once when I stayed up till 3am. I tended to get it when tired.

ARCHIVED Any Gardening Tips For A Beginner?
one more mile replied to purple's topic in Introduce Yourself / Share Stuff
The first tip my mom gave me was "don't eat the dirt" Start them young she thinks. I love to grow a big pot of parsley. If you have kids or just like bugs you may bet a kick out of how the monarch butterfly caterpillars that will chomp the heck out of it. I let them have it, the parsley grows back. I just pick around them. and enjoy the butterfly's. ... -
ARCHIVED Is Chronic Rhinitus A Symptom Of Celieac
one more mile replied to dolphin's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I just checked the definition "It is caused by chronic or acute inflammation of the mucous membrane of the nose due to viruses, bacteria or irritants." Six weeks after being gluten free I woke up with the oddest sensation. The inside of my nose actually felt bigger, it felt like a cavern had opened up in my face. I think my nose was swollen for so long... -
ARCHIVED Reaction? Heart Racing, Itchy Throat, Panic Attack?
one more mile replied to yumyummum's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I have never seen a gluten free calm chowder in a public place. Most use wheat to thicken it. To me it sounds like an allergy, maybe to shellfish. Eating it all the time does not mean you are not allergic to it today. My kid ate it all the time also until one day she was at a fish bake of some sort and turned all pretty colors. Now she cannot even eat... -
ARCHIVED Brain Fog
one more mile replied to Leper Messiah's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
actully I had most of those also just got tired of writing symptoms. Some I only figured out after I got off the Gluten. Had restless legs syndrome not the pins and needles. was not tested for bht B12 though so I do not know about that. I thought I had a weak ankle cause I tripped often. I rarely trip now. come to think of it I have not fallen off my exercise... -
ARCHIVED Brain Fog
one more mile replied to Leper Messiah's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
The average diagnosis takes 15 years. Its about the money not he health here. Many Doctors do not belive in gluten intolerance. They are slow to move from what they learned in medical school. Doctors kept telling me that I has other problems. That's not called sleeping that is passing out. Not a great way to sleep. Thank goodness I now take steps to get... -

I like to play and had an urge for chocolate cake today: 1 large egg 2 Tbs. almond meal 1 Tbs. Bobs red mill biscuit and baking mix 1/2 tsp. baking powder 2 tsp. sugar 3/4 tsp. cocoa powder a few drops of almond extract Nutella as frosting ( has milk in it) Spray a custard dish (or any baking dish that will yield a hamburger bun sized "loaf...
