I love the richness of coconut and almond. I mostly use almond flours when cooking and 1/4 of the total in tapioca to hold it together. I blend a few flours together most of the time. -

It is not impossible but there is a learning curve. People that serve food would not know if something is manufactured with gluten. Even if they mean well. Check the web site. All people get gas. Maybe its just "normal" gas. Being gluten free is not a cure all for me but It did cure about 85% of my problems. -

Weight on kids is over rated. If your child is active fattening them up may not be a healthy idea. Hard as my mom tried she mades mistakes, like not relizing the broth she poured over the turky had gluten in it. We figured that out soon and i eat meat that was close to the bone and skiped the skin. She though made me my own mini crustless pie then hid it in the cabnit while she made the crust. I stopped eating gluten a year and a half ago. Other then withdraw the only problem that I have had is that my pants now fall off. Seems I have gone from 187 pounds to 163 ( not dieting, 5 "2' tall.) As both are autoimmune diseases so I can see how they are related. My A1C is not down yet but I did get my first 100 as a fasting blood sugar. Down from 127 with 116 being my unhealthy normal since I was a teen. I am now 46. I have asked to read the container that the soft serve comes in. I have gotten strange looks but all three times I ate my ice cream with out worry. If there is a tip jar I leave a buck for the annoyance. Wheat is used more to keep the texture of the ice cream. With soft serve the machine does that so I suspect that wheat is not needed. Just some support, you are never back to square one now that you have a solution to what is going on with you! When I get glutened it takes about a week for me to get back to being ok. I read every label each time I buy something in case they changed how they made it. I find the less processed stuff I eat the better I am.
