  1. We have to remember, we are all individuals with different reactions. Also there is a lot we don't know about celiac disease. Why one person reacts violently and another mildly may not be something we understand completely. Remember that dr's thought kids would "grow" out of it because many stopped reacting? Well, we learned that was false. There's just...
  2. I was self diagnosed at age 50 and have been gluten-free for a year. I can look back over the years and see that I had symptoms but who knew? I agree you are lucky to have had an early dx to avoid so many years of damage.
  3. It sounds like your niece could definately be having serious CC issues. I don't have any good advice for you on dealing with your sister. Families are very tough and if they don't want to, they won't. But I will add that your niece may be having a problem with dairy. Many of us do. That can also give the symptoms you described. When I felt my niece...
  4. Can you find out in advance the restaurants? You could e-mail or call them before you arrive to get a clue about the eating situation. You know you don't have to explain your personal medical history to anyone. If you are calm and matter of fact about ordering your food, they will be too. Would you treat someone on a special diet badly? No, so don...
  5. My favorite way to dredge is to use gluten-free instant potato flakes. I just buy the cheap Walmart brand. It makes great chicken nuggets too. I haven't tried flour but I think that any one would do. They are bland so use all your fave spices. For breading you can use crushed potato chips or Rice Chex. I just really like the potato flakes and that's...
  6. I think Teflon in good shape can be cleaned but I wouldn't cook both foods in it any more. If cooking gluten & gluten-free foods, a seperate pan for gluten-free would be a good idea. Wooden spoons are inexpensive so why not err on the side of caution? I believe the toaster is a must have, also inexpensive. If you use a fine sieve type colander for...
  7. For me, it's true that when I went gluten-free, I reacted more strongly with much smaller amounts than before. My DH sounds very much like yours. If you're sharing a toaster, you are CC your food and that can certainly cause a reaction. You need to tighten up the controls on your food and it's preperation. A pain at first, but it soon becomes second...
  8. I'll join again. I need to shed a few before DD's graduation.
  9. Wow, that's a real puzzle! I don't know the answer but I was always taught that you should eat honey from local bees because they are using the pollen from local sources. The local pollen should help counteract your allergies. No scientific evidence just annecdotal. Any beekeepers out there?
  10. I recently had a problem with a safe tea that I believe was imported. So for me I choose to be very careful with any product that only has an address of a distributor. I think those are made overseas and don't fall under the strict guidelines of US foods. It didn't used to be a problem for me but now...

    ARCHIVED Soy-doh

    Right!!
  12. You know blood tests have many false negatives. Get a copy of your test results and post them here. There are some real experts on the testing that can evaluate the results for you. No matter what you can still go on the Gluten free diet and see how you feel. You don't need a dr's permission for that. It is a healthy diet and you can see if it gives you...

    ARCHIVED Books

I will have to tell you tomorrow. The books are at home and my computer is at my shop.
  15. I would say you may not want her to lose weight. As a child mightn't it be better if she didn't gain and just grew into her current weight? I always feel it's hard for a young child to lose weight in a healthy way. I am no expert, just a Mom.

    ARCHIVED Books

I also liked the Dummies book, great for newbies. For Christmas, I received 2 of Bette Hagman's cookbooks and really love them. They even have dry soup mix recipes and extra info that's really helpful.
  17. I don't know about that. I haven't tried the probiotics although I'd like to. A lot of people say they work. With me, I'm the heaviest I've ever been. I think when the celiacs kicked in years ago was when I could no longer control my weight. Of course no dr ever suggested celiac no matter what my symptoms were. Last year when I started the gluten...
  18. It can be really sneaky this gluten. I found it in my spice cabinet, things I thought were OK had been replaced with a brand that wasn't. The syrups for my coffee looked OK but turned out the caramel coloring in that particular brand had gluten. I ate sweetener and didn't check the package, yep, it was cut with wheat. I have a mixed kitchen and it...

    ARCHIVED Now What?

Are you really sure it's the rice? You might want to try cutting the fruit first and see what happens between that and the Caltrate D first. I couldn't tolerate any fruit for months and now I limit myself. The rice is my staple. Of course do what you think is right for you. I would just suspect the grapes first.
  20. I had tremendous shoulder pain for years. Acupuncture gave me temporary relief but the pain persisted. I assumed I had arthritis or bursitis. I finally had to take Alleve every day to function and sleep but it would still wake me at night. I went gluten-free and surprise, no more pain! I didn't start the diet for that and I was floored to find out...
  21. Are you going back to the dietician? He should make a visit with you there or to your dr. Privately let them know his misunderstanding of your condition and they will explain to him & make him understand. You're not being picky; you are fighting for your life. It is a great idea for him to check out this forum. Let him go the section for friends...

    ARCHIVED Now What?

Don't believe it. I cannot tolerate yogurt. If you have a problem with dairy, fresh dairy like yogurt is especially problematic. I can have aged cheeses and a little butter but yogurt really gives me pain. If I were having D and pain problems, I personally wouldn't go near it.
  23. I'm with you guys, overweight and not lovin' it. I recently decided that the extra grains were mostly out too. I'm sticking with some corn but laying off the rest. My weight was slowly creeping down in the beginning but when I started adding the alternate grains and cooking those foods a lot...you know. My daughter is graduating college in May and...
  24. I'd say your dr is subjecting your kids & you to months of bad stools. It's seems clear from your story that it is the combination of gluten and dairy free that did the trick. Many of us here are dairy intolerant, I am one. When the intestine has healed, many can add dairy back in. Others still cannot have it. In any case, I would say there is a...
  25. Congrats!! Welcome to the gluten-free life! That's exactly how I feel, lucky. The improvements are great and I am grateful every day. Keep up updated on your great year...
