  6. Congratulations on the DX!!!! And the wonderful job of the transition!!! That is such a huge and difficult change. I have family with allergies and refuse to change even when they get to the point that they can't talk and is having difficulty breathing. The food gets better and more varied once you figure everything out.
  7. Buckwheat is OK, it isn't wheat but other things might be bothering you tummy just because they are hard to digest. I had to give up beans - something with the protein but I can still have green beans. I also don't eat raw carrots any more. A lot of you symptoms sound like celiac disease.   8. The first thing I see is oatmeal - it is considered to be so contaminated during the harvesting process that it is not considered safe. You may want to try a food diary - very boring but very helpful for about a month. You right down everything that goes in your mouth and keep track of any symtoms, even if they don't seem related.   12. My hubby still eats a lot of sandwhiches because they are cheap and it leaves the good, gluten-free leftovers for me for lunches and snacks. I clean the counters ALL the time but he washes the dishes. If you use teflon - you need separate pots/pans and cast iron should be dedicated too - the rest (enamel (sp???) and stainless steel) are fine sharing...
  13. I ate lots and lots of potatoes - with lots and lots of protein because of sugar issues - I am pre-diabetic - the meat seemed to help balance the starch of the potatoes. Of course, I gained weight but I was finally full!!! I don't need to do that as much but I do seem to eat more than a lot of people and I am not that overweight.

  17. I make my own Kaluha - coffee, sugar, water, homemade vanilla with potato vodka, and vodka. That way, I know I am getting only potato vodka when I am in the mood for White Russian's. You only need an hour on the stove then let it sit for about a week.
  18. As to the schools - I have not had any problems with my youngest son - HOWEVER, he is only lactose intolerant but the cafeteria ladies and the nurse have been excellent with everything. Just about everything on the menu at his school has some type of milk in it so he has to be very careful. My other son's food intolerances are easier for him to deal with...

When a product just says starch, I go to the Web site and research it there - they almost always list which kind of starch they use if you did deep enough - if not, you can always call and see if they can look it up for you. If in doubt, stay away - also, if it isn't bothering me - since I have not tested positive for celiac disease - I am not in danger...
  20. I have only done the mixes. They have frozen? If they do, I didn't look - of course, I only look at gluten-free/CF/DF.

  24. I use cayenne, minced garlic, cumin, sea salt, and black pepper. I make mine without beans due to family issues (hubby, oldest son, me) with those little wonders. I do use a can of mild (for the kids) tomato with chilles for extra spice. I am not a fan of chilli powder so I don't use it.
  25. I eat out several times a month and have about 4 regular places I go to without problems. There are a couple of others that I go to and always get a little sick but not bad so I don't go there often, but occasionally I do for work. I never get sick unless I go at the wrong times like when they are too busy to as much attention to my food as I need them...
