I understand your joy! A year ago I could barely get out of a chair and wore slippers everywhere to lessen the extreme pain and gelling from my RA. Well, I don't run...but I could if I had to now. 9 months ago I could barely get out of a chair because my RA was so severe. Once properly DX'ed for celiac and on the gluten-free regimen my RA rapidly began to disappear. As a result I am able to workout like I was never able to even when younger. I have been able to ride my bike as well as the heavy workouts with weight equipment. I spent years developing various prototypes but had all but given up using them the last fifteen years because I would take forever to recover from a single workout. Have you ever read Dr. Weston Price's "Nutrition and Physical Degeneration?" I would suggest you look into it. Way ahead of its time right at the intersection of western impact on many simpler diets. Can you tolerate eggs? If so, can you gain access to some means to hard boil a bunch. They are good. Funny though, the only gluten I received in the last half year was from their pork chops in the meat package which were processed with some sort of gluten.
