  1. To me, any gluten is too much gluten. It's not an issue of amount, It's an issue of it being there at all. Of course, just like some Celiac/NCGI people can handle the mysterious "gluten removed" beers, those people could probably handle a little double-dipping, but I know I definitely can not. It might be a "better safe than sorry" thing, but barring any...
  2. I also miss the ramen... and there's so many ramen restaurants popping up around here. Of course, if the wheat didn't kill me, the soy would, so that's off the menu. I guess you have to examine why you've cut out gluten. If you're feeling better without it, then probably best to stay away. are you avoiding all gluten, or just wheat? I imagine it's a bit...

    ARCHIVED Tingling

Speaking of tingling, I've got it right now. Bad. My fingers are all tingly, and feel kind of stiff and sore when I bend them (there's definitely a pain at the base of my right thumb). I've got a tingly headache, face is tingly, arms are tingly. Feel like i'm "bobbing" around. I felt my ear drain a little bit. Also slightly nauseous (due to the unbalanced...
  4. Digestive enzymes can be hard on your systems the first few days, but hopefully everything will work much better (less bloating/gas/nausea/etc) once your body adjusts (so stick with it!)
  5. Oh, that's great news! Amazing how we get all thrown out of whack for a few days and it makes us look at all kinds of crazy theories. However, having a kick in the arse to get down to the bottom of a problem, even if it isn't as serious as we feared, is not a bad thing. Great to know your new doctor is being helpful! I was just thinking about your situation...
  6. I think I saw this recipe. It looks like the most straight-forward/easiest to substitute. First I have to get my hands on soy-free miso! (If I could edit the title of this topic, I would change it to that). I use garlic chili sauces all the time, but they're not quite the same as korean red pepper paste. It has a very unique flavour that you don't...
  7. I have to be super careful about this kind of thing too, since my man is also a beer-connoiseur. We usually have wine with meals unless we're out, in which case nothing usually gets shared. No kisses until teeth-brushing. That said, it's early days for you so all kinds of things could make you react for no real reason. It's that your gut is still healing...

    ARCHIVED Tingling

That sounds familiar. It might be a bit if what they call "gluten ataxia". Tingly extremities and a bit of unbalance. Kind of a slightly drunk feeling. I might try the B-12 and magesium thing too. You're supposed to take magnesium with calcium and Vit-D too, right? (I'm also wondering if my iron might be a little low too). If it makes you feel any better...
  9. Non-soy miso does exist! These guys make miso from chickpeas and from azuki beans! It's a start anyway! Has anyone ever tried it? Open Original Shared Link
  10. Hi all I love Korean food! And I've had to more or less give it up since, if you're lucky enough to find something gluten free, its still going to be full of soy. One of the staples in Korean cooking is gochujang, red pepper paste made with fermented soy (every packaged version I've ever seen ever also has wheat in it). Would anyone have any clue...
  11. I guess it's just one more thing to worry about, when you're supposed to be trying to not worry about stuff. Of course, I meditate to help deal with life as it is, and part of that for me has been accepting that there's going to be certain things I just can't/won't do and shouldn't feel guilty about that. However, I can't use my dietary needs as an excuse...
  12. I keep forgetting I'm in Canadaland with our evil socialized medicine. My doctor has sent me to all the specialists she can think of. It's usually a long wait to see someone though, and then another long wait for tests, then another long wait for follow-up...
  13. Hi all There's been occasional discussion here about the difficulty some Christians (particularly Catholics) have when trying to participate safely in religious/spiritual rituals that involve food. This could mean communion, but also potlucks, ritual feasts, and during group retreats. I'm Buddhist (Tibetan mahayana), and while food isn't the first...
  14. Welcome to the forum! Wow, you were very very lucky to have been diagnosed so young, especially back when it was a relatively unknown "rare" disease. You've had 30 years to prevent many of the horrible complications that can come with undiagnosed Celiac. of course, it's a life-long thing. No gluten EVER forever! I'm not surprised most of your children...
  15. One of my predominant symtoms is anxiety as well. I had frequent panic attacks before going gluten-free, and now it's a very occasional thing. If I feel my anxiety getting up for no apparent reason, I know it was something I ate (soy also gets my anxiety going). I'm also self-diagnosed, but Celiac runs in my family and anxiety/depression has been a symptom...
  16. Sounds like you're going through the hard work of healing. Dropping dairy might not be a bad idea for a while, and digestive enzymes. They help break things down when your gut can't. It's a huge help, and can reduce the "balloon animals" (Bartful, you is so funny!) Hang in there. You'll get past it.
  17. A neurologist can help you find out if you do have any neurological problems, which may or may not be caused by celiac disease. All the tests are annoying to go through, but it's better to go through them and know what you're dealing with, then you can determine what you want to do about it. (speaking of which, I still need to go for a follow-up with...

    ARCHIVED Soy

Hi Kenlove, I'm soy-intolerant. It seems to be a common intolerance for Celiacs, though no one really knows why. I also started noticing that tofu and such was bothering me, so cut that, but then any amount of soy bothered me. I get more neurological symptoms on soy: brain fog/dizziness, kind of like being drunk, and it gets my anxiety going. Doesn't...
  19. Finally! I found Maseca at a grocery store near my work (the last place I thought to look, cause I never shop there), so made tortillas last thursday. Sooooo gooood! I used about the same amount of water as flour, (too much and they didn't hold together as well), and the press works great. I also used plastic on either side (cut-open a ziplock bag). I even...
  20. Alcohol can irritate your gut regardless, so if you've got gastritis, then it's probably a good idea to ease up on it. If you were drinking 2-3 glasses of wine and 2-3 cups of coffee A DAY then yeah, that would definitely cause some problems. However, unless you have a sensitivity/allergy to alcohol itself (some people do), then its not like gluten, in that...
  21. I have done the mushroom bun trick as well. Get really really big (fat) portebellos, slice them in half sideways. I think next time I'll roast them instead of frying, as they do indeed get "juicy". Pat them dry with paper towel to absorb the oil. Have to be willing to get messy fingers eating it, but very tasty. Friends of mine made latke burgers at their...
  22. Hi Elizabeth, welcome to the Forum! It sounds like you've had a rough time. Having severe allergies on top of Celiac Disease is not an easy road, but good news is that if you can get a handle on things now, the rest of your life will just get better. Promise. Anyway, if you're getting better off the BC (have you found a substitute?), then likely that...
  23. I'd much rather make my own, since I can't use enough fresh ones at once, and hate having to half unthaw them, get out enough without breaking them, let those unthaw... ergh. I'm willing to do a bit of extra work. However, STILL no masa harina to be had! I do know where to get some (though the Bob's Red Mill version remains highly illusive) but not sure...
  24. A nystagmus (bouncing eyes) can be a neurological problem, which could possibly be related to celiac, i suppose (don't quote me on that), but it is something you should ask your optometrist about when you see them next. If it's happening all the time, it could definitely be a problem, especially if it's affecting your ability to drive/night vision, etc. Eye...
  25. Yeah, I get the anxiety bad. It's one of the symptoms I could do without. It kicks in a day or two after and tends to last a couple for me (if I have an anxiety attack in the process, it takes a while to recover from that). But everyone is different, and people's reactions change over time. One thing about it is if your son is acting unusually irritable...
